    PANEER BHURJI
    Preparation time: 5 minutes
    Cooking time: 20 minutes
    Serves: 2
    Ingredients:
    For Paneer
    3 ltr Milk,दूध
    ¼ cup Curd, beaten,दही
    1 tsp Ghee,घी
    1 tbsp Vinegar, सिरका
    1 Green chilli, slit, हरी मिर्च
    Salt to taste, नमक स्वादअनुसार
    For Bhurji
    2 tbsp Ghee,घी
    1 tsp cumin seeds,जीरा
    2 medium Onion, chopped, प्याज
    1 tbsp Ginger Garlic paste,अदरक लहसुन का पेस्ट
    2 tbsp Green chilli, chopped, हरी मिर्च
    Salt to taste, नमक स्वादअनुसार
    2 medium Tomato, chopped, टमाटर
    1 tsp Turmeric powder, हल्दी पाउडर
    ½ tsp Red chilli powder, लाल मिर्च पाउडर
    2 cup Prepared paneer, crumb,पनीर
    3 tbsp Curd, beaten, दही
    2 tbsp fresh Coriander leaves, chopped, धनिया पत्ती
    For Garnish
    Onion, slice, प्याज
    Coriander sprig,धनिया
    Lemon wedges, नींबू
    Process
    How to make paneer
    ● In a heavy bottom pot add milk and let it boil on medium heat.
    ● Then add curd and add little bit of ghee in it and start stirring it.
    ● Now add vinegar to it and also a green chilli for flavor and add salt in it mix well.
    ● Gently stir the milk until you see the entire milk begins to curdle.
    ● Cook for more 5 minutes and you will see that it is curdled completely.
    ● Now strain the curdled milk in the strainer and remove the excess water from it.
    ● Allow the paneer to settle for 1 minute. And crumble it in a plate and keep it for future use.
    For Bhurji
    ● Heat oil in a kadai, add cumin seeds and let it splutter.
    ● Now add onion saute till it gets translucent. Add ginger garlic paste and saute till the raw aroma
    of ginger garlic paste goes away.
    ● Add chopped green chillies, tomato and cook till they become soft. Add salt to taste, turmeric
    powder, red chilli powder and saute well.
    ● Add the crumble paneer and mix well and cook for 1 or 2 minute.
    ● Switch off the flame. Add curd and mix well.
    ● Add chopped coriander leaves and mix well.
    ● Garnish with coriander sprig, slice onion and lemon wedge.
    ● Serve hot with pav or roti.

    Excellent recipe Chef. Over the years, I have learnt many things from you and have a lot of respect for you.
    Did you say that Paneer is Ricotta?
    Afaik, Ricotta means 'Twice Cooked' and refers to the cheese which has been extracted from the leftover whey after the cheese has been extracted.
    Paneer is NOT Cottage Cheese, it is Farmer's Cheese. Please correct me if I am wrong.

    Ap koi healthy food ki recipe bana sakte ho?? jabhi kisi recipe ko try karna hota hai to fat ki wajah se chut jata hai... sometimes it's ok but sometimes it creates health issues (vegetarian healthy food..no cheese,no fat,no extra masal and no more fat)

    GENIUS! I think I have seen and met with 'N' number of chefs and also comes from a family where everyday is a 'Good Dish Day' I just don't understand how come this guy cooks with a genuine smile on his face, it's purely his dedication towards his love of cooking and ofcourse he's also a foodie 'Coz mom always says jisko khaana pasand hai usko bnaane me bhi bahut swaad aunda hai' so Brar sir, I wish I'll meet you someday!     I saw one episode of lost recipes on epic. Which there was a sweet recipe of something like Gulab jamun that had paneer. They said that paneer was in India. This was from Karnataka if my memory serves right.

      I had the same doubt. First I tried with adding yogurt while heating but that failed. Then tried again by adding yogurt after turning off the flame and it worked. Within 3-4 water got separated.

    Loved your comment on how it's OK to make an international entrant part of the culture. Concept of trade , immigration and fusion foods have been there since ages - that's how the Human being evolved. and yet, socities continue to feel insecure about their traditions, culture, food, music. stamping a tradition to one country or community should do just that - stamp of origin. it must be respected, adapted and flattered. Imitation is the best form of flattery and we food lovers should do just that. Thanks for a beautiful history tour as always.

      Thats true brother.... May be paneer or curdling of milk is 100-150 yrs back for north India but its very old must be like more than 600 years back whn the Jagannath temple of Puri was built from that time Rasagola was one of the most liked desert or bhog liked by lord Jagannath as called from that time...so may be your talks can be right but our odisha's history says chhenna(curdled milk or paneer) is first invented in puri Jagannath mandir... Thats what I want to say we really love ur channel there is no intention to make u prove wrong but jst sharing our history and tradition which proves that chhenna is our india's only....     Tomatoes, potatoes and chilies aren’t native to the INDIAN subcontinent. They came from the new world. If you look at really old INDIAN recipes, you don’t see any of these ingredients.
