    Chocolate and Passion Fruit Tart
    Sweet and tangy Passion fruit with decadent chocolate ganache and buttery sweet chocolate crust.

    INGREDIENTS:
    FOR THE SWEET CHOCOLATE PASTRY
    * 185g All-purpose Flour
    * 18g Cocoa Powder
    * 85g Icing Sugar
    * 50g Corn Starch
    * 1/4 tsp Salt
    * 1/2 tsp Vanilla Bean Paste
    * 130g Butter
    * 1 Large Egg
    FOR THE CHOCOLATE GANACHE
    * 165ml Heavy Cream
    * 35ml Milk
    * 165g Dark Chocolate
    * 35g Butter, at room temperature
    FOR THE PASSION FRUIT CURD
    * Bloomed Gelatin (4g Gelatine Powder + 18g Water)
    * 142g Strained Passion Fruit Pulp
    * 172g Caster Sugar
    * 4 Large Eggs
    * 157g Butter, at room temperature
    * A Pinch of Salt
    FOR THE PASSION FRUIT GANACHE
    * 25g Strained Passion Fruit Pulp
    * 94ml Heavy Cream
    * 94g Dark Chocolate
    * 15g Butter, at room temperature
    * 15ml Milk
    FOR THE PASSION FRUIT JELLY
    * 31g Strained Passion Fruit Pulp
    * 13g Caster Sugar
    * Bloomed Gelatin (3g Gelatine Powder + 12g Water)
    * Passion Fruit Seeds
    I recommend a loose based 23cm tart tin.

      When you want to make a tart in a 25cm (10inch) pan instead of a 23cm pan, you can adjust the recipe like this:
      1. **Calculate the Area Ratio:**
      - Take the square of the new pan's radius (25^2).
      - Take the square of the original pan's radius (23^2).
      - Divide the new pan's square by the original pan's square to get a ratio.
      2. **Adjust Ingredients:**
      - Multiply each ingredient quantity in the original recipe by the calculated ratio.
      For example, if the ratio is 1.3, you'd multiply each ingredient amount by 1.3.
      3. **Baking Time:**
      - Keep an eye on the tart while baking, as the larger size may affect baking times.
