Beautiful and neat vegs garden. Just my opinion and from experience. I prefer to let the vines spread on the ground. That way, it will keep the moisture of the soil and will not dry the sweet potatoe fruit in the ground. If the vines/leaves are left to spread on the ground, it also suppresses the weeds. Weeds will not have room to grow. If it gets overgrown, you can always trim it and eat the leaves/shoots. I just think stringing the tender vines/stems one by one every few days is too much trouble and the hot sun can easily dry the tender leaves also. In other fruits and vegetable vines, it's best to trellis it, like you do, but not with root vegetables, I don't think. Rain and water sprinkler will keep the leaves clean, but still needs washing. Shoots grow upright, anyway. Your technique looks nice though. 😊

Are you still able to harvest the sweet potato itself if you are harvesting the greens?

The twine goes right in the composter with the vines. Recycled, but not reused.

If you use cotton or sisal it will compost right along with the discarded vines.
