Great video Will! Love that you made your own broth. I figured the crab went to crap. I make my broth out of lobster bodies or muscles, PEI or N.S. It freezes great. Personally, I never use anything but skim or low fat milk as I want to taste the seafood, not cream. I make it in a different order but yours looked delicious. I’m willing to bet there was a huge crab flavour even without the crab meat & that’s all because of the time you spent making the broth.
    Thanks for sharing!!!

Ok first off, thank you. Thank you for always leaving thoughtful comments. You’re here for the right reasons and I appreciate that. Now let’s get into it… mussel broth?!!! Genius. Never thought of that and it would be so obviously delicious. Second you’re right… heavy cream (while good and filling) was like a sledgehammer. A lighter cream would have let the delicate crab flavor shine. If you go back a bit to a cod chowder I make… it’s the right ratio. This was good, not refined not great but good. It was like campbells soup. So while being nostalgic and scratched an itch, it wasn’t perfect

@@CookingWithClams don’t ever think I’m criticizing. Please, I love seafood and you have brought so much to my repertoire. Don’t ever stop being you. I’m me and it’s part of growing up in PEI, but mostly, of my preferences. I have watched your channel become my #1 for options to add to that.
If you ever come to PEI or N.S. ,please let me know.

Will, take it from someone who has worn waders for 53 years. I would highly recommend that you not put any items in the inside pouches of waders that you not only want to keep dry but to keep period. When you bend over, things will fall out either into the bottom of the wader or into the water. Additionally if you wear waders enough, you will eventually go for a swim. At some point you will either step into a hole or stumble & fall. Waders not only keep water out, they will quickly fill up & keep water in when you end up in the drink. I eventually wised up & started using walking sticks especially in thick mud, uneven ground & rocks. I’ve hunted waterfowl for over 50 years all across North Central, & South America & I normally go for a stumble & swim at least twice per year. What’s worse it is normally on the most brutally cold, nastiest days of the season. Hypothermia is a real b!tch especially when you lose your car keys. Love your videos!

I am slightly allergic to clams/mussels but I can eat everything else (i can eat 1 or 2, but I'll be itchy). I've yet to try NE clam chowder for this reason, but i see no point in not adding crawfish or blue crab to it! I always make etouffee from scratch but I may need to try this recipe this weekend. 30lbs of live crawfish from Louisiana to my front door in SoCal - can't beat it, and I need to find other ways to use it!

As much as I loved this video and how delicious it looked at the end, it’s not a true New England chowdah for one reasons and one reason only; Long Island is still not truly part of New England. It seems like more of a wannabe Rhode Island to me (or maybe Rhode Island is a wannabe Long Island, I wouldn’t know).

Its nice to get the views, thoughts, and randomness of someone who isnt a "pro" and just knows everything...its more relatable. Sad about the crab meat losing its flavor and appeal, but it looked hella good dude. My first thought was to throw some crab from the store in, like some of the pulled meat from publix. But with that homemade stock and chowder, you cant go wrong anyways!

Looks sooo good ! I love New England clam chowder and the crab twist sounds good. I would be tempted to make a seafood version. Crab and fish together in the stock. Maybe heads and racks with crab for stock and then grill or blacken the fillets. Flake the blackened/grilled fish into the chowder as you server it so it keeps its chew. Just an idea riffing off of that chowder.
