Thank you SL-Very tasty mini meat loaves-that extra BBQ sauce as topping is genius!!! I used a Texas muffin tin, so I got 6 decent sized single portions (1 for each of us for dinner tonight plus mash pot and veggies and 4 for the freezer, AND.. a little loaf tin meat loaf that will be lovely for sandwiches this week). Excellent!!!
With the topping you kind of turned the meat loafs into bite sized shepherd's pies :D I love muffin sized food, like leek quiches with a lot of cheese, potato muffins stuffed with cheese... I have to try some these by changing the ingredients to make them veggie :) Though I might have to find a substitute for the wrappers, since asian food is not that common to find in supermarkets around here and if there is stuff it's usually just asian veggies in jars and dried noodles... Hmm maybe some kind of filo pastry... Whatevery, great ideas as always. I love your videos because they have something for everyone, are usually rather healthy and easy to make.
I made the mini lasagnas with oven ready lasagna noodles! They work great. The only issue is you would have to break them to fit but I had no problems getting mine out. Thank you so much for the ideas!!!!
You just gave me an idea for how to use my leftover turkey taco mixture from when we have taco night...I can't handle beef real well so I am always making 2 different taco mixtures. I also love the lasagna idea as well. Both will be great for packed lunches.

SaraLynn you are making me lose my lazy title. I have been in the kitchen food prepping and cooking up a storm. I made both the cheesy lasagna and the taco(no chicken) meals last night and they were fabulous! I halved both recipes and put them in the same muffin tin. My neighbor and I ate the whole tin. Yep, 2 people, 12 portions! Next time I will try adding zucchini or eggplant to the lasagna so I won't feel so guilty about eating all of that cheese. (I'm a cheese-a-holic currently undergoing treatment!) Thanks for sharing, I love watching your videos! (SN: the amount of garlic is not included on the printed recipe from your blog.)

I've been looking for some easy, healthy, vegetarian pastry dishes that I can prepare in advance, freeze and cook/bake in the oven for when I need to pack something portable for school.

However, half of my family are vegetarians but they do however eat seafood, so I am just wondering if there are any substitute for the chicken and beef in the other two recipes.
