    This is the closest thing I could find for a pastry my dad used to love...thank you.
    P.S. I used a little basic icing on the tarts but added just a hint, teaspoon, of orange extract. The combination of these 2 often underused ingredients made for a delicious tart!

    2:28....not understanding why you do this?

      The tart shells will puff up, shrink, bubble, or blister so it needs to be weighed down flat for the filling to go in later.
