"FUCK BRUNCH!"
Someone on a subreddit explained that a proper brunch program at a place REALLY messes with the chefs' schedule, and requires them to do a LOT of extra prep. And they often involve a lot of eggs and that can be tricky as there are a million ways to prep em and people can be quite picky about them. It can also have a wide variety of dishes (burgers, pancakes, some egg dish) at various times. So it just messes things up, organizationally.
Completely understand that. Makes sense why some places are only for brunch or close between lunch and dinner. Sorry for the chefs but we love brunch. lol so thanks to the chefs that do it
You also need to consider how BORING the basic things are to prepare. You see it in Marcus that he thoroughly enjoys learning and trying new things, that's part of what being a professional chef is. Building a foundation that gives you consistent results to then apply that to new, exciting recipes or techniques. Brunch is eggs, toast, and other boring (though delicious) foods. It's stifling creatively and also follows Saturday which is arguably the busiest day at any restaurant.
