I did this exact thing a few months ago -- loved using a Galaxy Watch 6 Classic, but I too love switching phones every so often. And it's a pain to have to re-set up the watch every time (which is what you have to do, at least with Galaxy watches). With the Amazfit GTR Mini, once you set up your Amazfit account, you can just install Amazfit's app on any of your phones, and the watch syncs back seamlessly to whatever phone you're using. Love it. Plus having a watch that handles 95% of what I actually used the Galaxy Watch 6 for, and 10-12 days between charges? No brainer...
Another drawback I found is the GPS. You have to jump through hoops to get navigation working and it doesn't work with Google. Battery life is awesome though.
Why not use your Pixel Watch with both your Open and Fold? I use my Pixel Watch with both and the experience is exactly the same. EDIT - got to the end of your video and I get what you're saying. But, honestly, Google Fit and Fitbit both sync to both my devices and I have all the same apps on both my Open and Fold. So, even if I swap devices, I'd still get all my notifications, sans phone calls, on my watch even if it's not paired to the phone I'm actively using.
Amazfit watches are nice and affordable but there's a scientist on RUclips I follow who tests ALL smart watches and Amazfit's are always at the bottom for accuracy.
