  • I love leeks. So, I was pleased when I was asked to explain how to cook with them. I modified a recipe from Gordon Ramsay's Fast Food and I used a recipe I had done for my Food Network show. Proper food storage is important in restaurants. For a home cook I like the Rubbermaid containers. Let me know if you try it!

    The white parts of the leaks are delicious fried in butter and garlic. I'm growing some again this year. You have to keep hilling them to get much blanched white part.

      @@DaphneDishesAgain The most delicious part is the white part. What you do it bury (hill) more dirt around the stalk. That keeps it from the sun. Otherwise, it turns green.
      It's sort of like cauliflower. That you had to cover it from sun to keep it from going green.
      I just put mine in about 2 weeks ago. Very thin and grass blade like. But all onions want to survive, and they do. They are just fun to grow. And when you do, you feel proud of it!
      Once you get established, Hill baby HILL! Bury that base.

    Leeks are SO under-rated! I save the dark green parts for stock. You can freeze them until you need them.

      @@DaphneDishesAgainIt's Chris W Daphne! Loving your new channel. Besides the obvious P-Leek soup, I often add them to anything that wants an onion flavor. Sometimes combining them with another onion will give a more "full spectrum" of onion. I think they are marvelous in an omelet. Leeks sauteed in butter is a sauce on it's own!
