When I first started watching this video my eyes went DIRECTLY to that Kiritsuke also! Love everything about it! 😍🤩😍🤩The rust doesn't bother me. I have a few other knives that do that also. It is what it is. Patina helps.... so just use it, enjoy it, and build up that patina. It's so beautiful, it's totally worth the extra care.

How did the Shirahama feel, quality-wise? It looks like a Sakai blade and is rumored to be forged by Nakagawa but it’s a bit of a mystery. I’ve seen them for as little as $170 which seems like an amazing deal considering Nakagawa blades can run $300-600 easily.

Good video and nice knives 👍 the day before yesterday I was faced with the decision between Shiro Kamo Tora Gyuto or Hatsukokoro Rainbow Damascus Gyuto. Since I didn't know Hatsukokoro (especially the blade geometry), but Shiro it became the Shiro Kamo Tora. But if you show and explain the knives like that, there will probably be another Hatsukokoro knife soon after all 😄

I think my favourite series is the Inazuma series. I would NEVER bring it to work as it has iron cladding. But, they’re amazing performers. I have the 180 bunka. Incredibly thin, agile, and delicate. Edit: I had to sharpen and strop it because OOTB the edge wasn’t good. But it probably has the most durable edge due to its AS steel.

I have a couple of them, I have the blade second from bottom ( Kiritsuke ) and it is a really nice knife, highly reactive and the color is beautiful.
