Chicago south-sider here. You did your thing man! Great job respecting the culture and food traditions. Like you mentioned, up north, they highlight more regional cooks, briskets, etc... But if you're on the southside, you will find you a Ribtip/Link combo... And 8/10 (because there are a few spots to avoid) that food will be DIVINE!
One thing I would suggest, once you get that Char look on the meet. Stack the meat as far away from the hot side as possible, spritz the coals after placing some additional wood on there and come back in an hour. It gives the same Chicago style taste, but also allows the meat to get a little more tender. Something I learned from my pops and trial and error from grilling the last 30 years.
I admire and respect you even more now! One, for doing some barbecue, and especially Midwest based. But because you got Joe Yim on here with you. That's what's up!!
Made me happy to see that you use your grill and it shows it. Always feel bad when I see videos of people cooking on their super clean grills. Can’t deep clean the grill after every use.

I'm in the south suburbs of Chicago and I can attest to this video. There's a lot of small family owned BBQ joints scattered all over the are that are great. I love the tip and wing or tip and link combo with the a mix of hot and mild sauce. Damn, my mouth is watering just thinking about it!

I’ve made ribs hundreds and hundreds of times but never rib tips. There was a place we would go for lunch in Mundelein Illinois that had the best rib tips. I can’t remember the name of the place I think I’m gonna have to start making some.
I wish George's BBQ in Harvey was still around. St. Louis style ribs, tips, and links, served with fries and soppin' bread, and lots of a very sweet sauce. Very similar to what you got at Lem's. And yeah, he used one of those aquarium smokers, which I never knew those were a thing - I thought it was something unique he did.
I do believe we have some spare ribs in the deep freeze and therefore what will be hitting the ol' Weber next weekend. I love rib tips, but usually don't sauce them (Texan); however, I'm going to copy your sauce and give it a go. Great vid as usual

That is the authentic way to do it, but my buddy's rooftop is a lot better for filming AND has a sick view of the skyline as the background - hard to pass up.
As a Chicagoan, this has to be one of the most disappointing and disrespectful takes on Chicago style rib tips. I couldn't even finish watching the video. You lost me when you said, "Rib tips DEFINITELY need sauce."
the problem with some of the meat culture in chicago is the quality. Most of what they sell are low grade meats that have been processed. rib tips are super annoying to eat with the bones. Hotlinks/vienna hotdogs. italian beef is also a cheap tough cut of meat cut super thin to mitigate the toughness. Deepdish pizza is way more bread, cheese, and sauce than it is meat. The big slab of sausage looks impressive, but when you consider its 25% or less of the weight of the pizza you are really just buying over priced cheesy bread. Chicago dogs covered in all the toppings hide the flavor of bad/spoiled meat. The only good thing about chicago dining is all the ethnicities so there is a ton of options. Even high end places in chicago dont compare to cities smaller than it. Growing up in the chicago land, and then experiencing other places, shows just how little this state cares. When your big stop back home is some cheap ass shaved beef that you are charged an absurd amount for, you cant really claim culinary significance.
