As stated above the unit is designed to enter a defrost mode, when that occurs the compressor stops, there is a heating element that is located under the evaporator (the radiator looking thing with ice on it), that defrost event is ended when the terminator switch closes, the terminator switch has two wires and is held onto the tail coil of the evaporator with a clip. I think you have a problem with either the board that controls the unit or if it has a defrost timer it’s probably that timer, it looks like it’s not entering defrost cycle.
Inside the freezer area, under the evaporator there is a tray that is intended to collect the melt water from the defrost cycle, it does drain to a pan under the fridge where hot air from the condenser blows across it to evaporate the water. If you ever have a problem with water forming ice in the bottom of the freezer that drain pan under the evaporator is clogged up.
Sounds like you have a problem with the condenser defroster. Clearing the ice like you did cured the symptom but probably not the cause. This explains why it contues to freeze up. There's a heating element, thermostat and control panel that one or all could be the cause. I'm no expert, just going through the same exact thing with my home fridge. Good luck!
It’s not common for them to freeze up. We had the same problem and had to replaced the motherboard. Since then, it has been working fine. Contact Lippert they are very good to deal with. They own the rights to Ever chill now it is not that hard to replace the board, but it is not that easy to get the refrigerator out without damaging the trim piece on the bottom, I had to build some small platforms to get the refrigerator out and over.
