    Hi adrianna thank you for that explanation. I just made black Swiss meringue buttercream today and I couldn't get it to be stable its was borderline runny.. really wish black could be more stable like other colours. Lovely cakes ❤

      Ikr!! I have tried this method as well but on italian buttercream and got the same result! My buttercream did turn black but after re whipping it didn't turn out to be as stable as it was before... it was too runny😭😭 how to fix this?

    Hey Adriana! I just love this technique, the cakes looked amazing and so delicious. I can just imagine how rich and decadent they taste...yum!       Hey Kelly! Aww thanks, yeah this is really rich from the black cocoa.... the black frosting is mostly for looks tho and is actually tasting just like plain swiss meringue, which is weird because you'd think itd be super strong in flavor due to the color. Happy halloween ;)

    That is an awesome black color...black is yes very hard to get darkened...but I bet when eating this cake your whole mouth and teeth turn BLACK!! How funny would that be!! Kids would love it for sure!! :-)

    I am curious about adding the black cocoa powder in the beginning to the egg whites, cream of tartar, and sugar mixture over the double boiler. Have you tried this or do you think it would interfere with the egg whites being able to stiffen of "merengue" properly? I have never tried to warm my SMBC and I am definitely afraid of ruining a batch.

    Help! My buttercream would not come back together after the freezer. It was definitely back to room temperature I’m pretty sure. What went wrong? Also I feel like it lost a lot of the black after it was in the freezer and was much less of a rich colour

      You can but it won’t be as dark. I go over that in my microwaving buttercream vid. :)
