    So many people are surprised when they know I cook restaurant style food at home. Even my mom can't believe we can cook and eat like this with a toddler in the house. The secret for me is in dishes that use the sous vide machine - Anova, Instant Pot Sous Vide, Fissler Multipot, Joule - whatever.
    You can really sous vide everything, and sous vide frozen chicken breast without thawing it first is a huge time saver. Once you get the hang of this sous vide meal prep trick, you'll have no problem buying then vacuum sealing food and cooking food from frozen with the sous vide machine.     As a busy mom, I don't always have a lot of time to be in the kitchen for dinner. So I whip up easy frozen chicken sous vide meals so we have something tasty to look forward to.     This is a good video. I do have one correction to make about a particular detail, but the overall guidance is solid, and ideas for adding flavor are good as well.
    Now, the only thing I’d change is the “2 hours at 140F” part. Like you said, add an extra 1h to the cook time for frozen food, and while I’ve heard others go lower (like 1.5x the normal time), that’s exactly the same rule of thumb I would give to a general audience in the interest of caution.
    Basically from what I’ve read, 140F/2h would *just* be getting to the safe range for a breast of normal thickness - if it was coming from the fridge, not the freezer. 140F/3h is what I would recommend. (See Douglas Baldwin’s recommendations on cooking times.)
    Mind you, I’d also recommend a slightly higher temperature - I’d tell someone to start at 149F and then experiment from there - but that has to do with preference regarding doneness and texture, not safety.
    Good video though. Folks, don’t be afraid to try this!

    This video was helpful! Quick question that may sound dumb, but do you rinse your chicken before freezing it? I have heard conflicting information that rinsing your chicken just spreads contaminants throughout your sink and kitchen, but others say it's important.

      That’s a good question. Generally chicken breast I do not wash but will usually pay dry, especially if cooking it traditionally on the stove in a pan so it Gets nice and crisp on the outside. A whole chicken I do. If I get a chance to look into it further I’ll let you know.

    Do you think it's OK for me to sous vide fresh chicken and then never take it out of the bag and freeze it for food prep?

      I do that, not necessarily freeze it but will leave it in the bag in the fridge until needed for meal prep.

    Is 1 extra hour really necessary for frozen? Can you get away with extra 30minutes?

      I always do 60 minutes or longer.
