I just use my lawn mower without adapting it, just tilt it up slightly in the front and set wheels at 4 " or more height and mow down all of my perennial plant beds every year using the mower bag to pick up debris on the way. Compost my bagged mulched plants and done.

We though about covering it, but thought it would help with less stuff going out of the front 😂

As a power equipment triage nurse, I have to be boring and chime in. It's not designed to be a brush hog. It's a finish mower with a straight blade. That straight blade will bend ONCE. Then it will snap and break off due to the heat treatment given to said blade. Next is the spindle connected to the blade. With it purposely being ran into trees and stumps that spindle will bend causing the blade to no longer spin true and will result in horrible vibration eventually leading to the blade slinging itself into the side of the deck. If it's already been bent it can, and will send blade chunks hurling out of the nearest exit. If you're in front of that machine when it happens an ambulance can absolutely be in your future. You guys do good metalwork and fabrication I just don't want to see someone potentially build a Darwin award.
I will say though if you welded a guard over the top of the blade and put heavy rubber or chain guard piece in front to catch the debris, added a larger engine, with a proper brush blade you may be on to something.

I am definitely going to treat this thing much differently now, I wonder if we put a proper blade on it without an engine upgrade will it run better with just a new blade. also on the different side of the same coin what if we put a 22" saw blade on it? I wonder if that would be 10x worse or 10x better.

I think if you put a flail blade on there with a proper adapter then added the front end protection you'd be in business.
