You should have toasted the oak in an aluminum foil pouch in the oven at 400F for 30 minutes to an hour before charring them with the torch. Oak barrels are given this same treatment, and it is a large part of the flavor profile you'll get in your end product. It helps to balance the amount of woody Oak flavor vs the caramel vanilla stuff oak can impart, so you reduce the chance of over Oaking it.
I have tried this method and over-extraction from the wood is a thing. Suggestions are larger pieces of oak that are toasted then charred on two sides. The oak should be well aged white oak like the maturation sticks that Jessie from Still-it sells in his store. No heat. Air out the jars after a session since an essential part of aging is small doses of oxygen. Barrels breathe. Also, if you don’t want to buy an ultrasonic cleaner, secure a jar on a vibrating platform or shake table. A small motor with an eccentric pulley works well. You don’t get cavitation but the vibration speeds up the oak infusion. All that said, less is more with oak infusion. Cheers!

To be fair you can also just do extracts with vodka. Just soak the herb or whatever for several days-weeks (in the case of vanilla you can go for years) and taste it occasionally until you get the flavor you want then remove the flavoring agent. It is shelf stable and easy to pour and measure.

I often over oak mine, sometimes it's perfect other times it tastes as your drinking a tree, I always keeping some in spirit on the chips and then topped up with more neutral and new chips. All my old chips go in big jars then the topped up with heads and tails, leave for months (sometimes), haft the time it comes out nicer than the hearts.

Hi Hoocho what i am told is to get the best of the oak 50% to 65% is the sweet spot and next time try using coconut vinegar it is very mild when i do gin i infuse for a week the bath tube Gin from the 1920`s

I have aged my sugar-based moonshine just by putting oak in the jar and letting it sit for a few days to a week. This method seems certainly faster, would be interesting to compare the taste.

Back in the day I use to take my white dog and place JD smoke chips they make from old whiskey barrels and add them to a quart mason jar and place it into the microwave and nuke it till bubbles started to form this is just below the boiling point, then remove it, place the lid and ring on the jar which will create a vacuum and you can see the tannins pull from the wood chips. Next I placed the jar in the freezer for 24 hours and most whiskey snobs couldn't distinguish a proper aged whiskey from my express aged raw white dog. Keep learning till the day you die! Nice job brother!

Another thing you could try with this ultrasonic cleaner is cooking sous vide in it. I have heard it can make tough foods tender while cooking. Making cheap steaks as tender as more expensive steaks.

I see it in a lot of ways, I'd mostly use it with normal/cheap spiced rhum to make them my taste and better/sweeter tasting to appreciate it with mates, people i invite over etc.. just chilling, sipping etc.. But if you like getting tipsy, it can be expensive doing that every other friday night. So you could get a good but cheap white rhum as a base, do your own arrangement. Either vanilla, honey, orange peel or only charred wood barrel chips. And enjoy your multiple shots way more than straight puke memory flavored white rhum xDDD Even just to elevate your cocktails, instead of doing a mojito with white rhum, elevate it by infusing honey and vanilla, then use it for your mojitos. In the incoming months ill try that, really really curious to how it'll go ! Also if people could try : pressurized + ultrasound aging at the same time with a dual purpose DIY machine I'd be soooo curious about the result. Like a pressure chamber but with an ultrasound cleaner base

Pro tip for measuring sticky/problematic things. Just place whole container on scale, zero it out then by taking some of it youll see 'minus' weight that is exacly what you just took. 0 problems, no dirty side containers, etc.
