I was part of a construction crew that rebuilt 5 blocks of houses after Hurricane Andrew. For 6 months we lived on Peacock Bass that we caught every evening out of a canal next to the work site. Most of the time we fried them on a Coleman stove, but occasionally we cooked them over a fire in a double sided fish grill. We also had swamp cabbage, and cattail tubers.

One thing I am glad to hear is that in Florida right now it's becoming very popular to do catch and release with all the native fish, and keep all the invasives for eating. My brother claims that when he goes fishing he usually gets two or three invasives for every one largemouth bass that he reels in.

It's a White Bass / Striped Bass Hybrid. We have them in Wisconsin, too. We just call them Whipers. "Sunshine" has to do with its parentage. Whether it came from a Male White Bass x Female Striped Bass, or Male Striped Bass x Female White Bass. I don't remember which makes a Sunshine Bass, or how you tell the difference. The other combo makes a "Palmetto Bass". In any case, the Temperate Bass family are really fun to catch. White Bass, Yellow Bass, Striped Bass, and all their hybrids are great sport fish, despite their sharp gill plates and spines. 🙂
