Ingredients:
1/2 cup basmati rice
4 cups whole milk
1/2 cup sugar
1/4 cup chopped nuts (such as almonds, pistachios, or cashews)
1/2 teaspoon ground cardamom
1 tablespoon ghee (clarified butter)
A pinch of saffron strands (optional)
Instructions:
Rinse the rice in a fine-mesh strainer under running water until the water runs clear. Soak the rice in water for 30 minutes.
Drain the rice and add it to a pot with 2 cups of water. Bring it to a boil, then reduce the heat to low and simmer until the rice is cooked and soft. This will take about 15-20 minutes.
Add the milk to the pot and bring it to a boil, stirring occasionally to prevent the milk from sticking to the bottom of the pot.
Reduce the heat to low and let the milk simmer for 30-40 minutes, stirring occasionally. The milk will start to thicken as it cooks.
Add the sugar, nuts, cardamom, and saffron (if using) to the pot and stir well. Continue to cook on low heat for another 10-15 minutes, stirring occasionally, until the kheer thickens to your desired consistency.
In a separate small pan, heat the ghee over medium heat until it melts. Add the nuts and fry them until they are golden brown. Add the fried nuts and ghee to the kheer and stir well.
Remove the pot from the heat and let the kheer cool to room temperature.
Serve the kheer chilled or at room temperature, garnished with additional chopped nuts or saffron strands, if desired.
