I worked for a Dutch meat cutter his name was Hank Whisker. He would have scolded me for hitting the eye on that rack of lamb while cutting those bones. He was a good man. I learned a lot from him and others in our time together.
Same here. Love the sound of the knife on the block. There is nothing like fresh lamb chops char grilled and finished with a rosemary mustard crust. Chef Recipes on my channel.
Looks absolutely delicious, better to take your time and make good cuts than rush when you don't need to and possibly give your customers an inferior product. To everyone that says he's slow, remember this is an artisan butcher shop, not a processing plant. Quality > Speed. He is literally facing his client as he does this video.

Yep, I along with 2 more people would fill 2 sixty foot multi tray counters in 2.5 hours before the store opened. then go for breakfast, back down and prep a load more before leaving.
On his apron it says "Northfield". Im pretty sure this is Northfield Farm at Borough Market. A recent inspection 6th September gave it a 5 star rating.
What language do you speak? There is no language called American!! You yanks are so dumb you couldn't think up a language of your own, so you had to steal English!! The English have a better education system, so they can usually speak more than one language. Yanks can't even speak English properly, Ya'll.
oh my gosh this was so funny i i and she is the one i she was like a woman who is a great woman and a good friend to the woman who is a woman and she was the woman that she is a good woman to me she is my life and my life she was like my life and my woman and she was so good and my woman is
Excellent, but not quite the best. Highly skilled and experienced. And the video is well shot - simple, but shows clearly the work being done. But my question is; as someone who is not from Europe and so doesn't have all (or enough) information to know all the details of the situation, is London soon to lose this resource of traditional craftsmanship because of Brexit? Will he be required to quit England (I think we can assume that with the E.U. he hasn't had the need to acquire British citizenship)? I'm not trying to bait or troll. It's just that, as an outsider enjoying the video, that's the question that came to my mind.
If you watch this video voluntarily as a vegetarian then you seriously need some help. it isn't hard to just not view a video like this. a blind man could know what would happen in the video.
for what reason he should wear gloves? There is no more hygienic way to work than with bare skin - if you wash your hands often and always before going to the next piece.
he properly knew how to cut.. but its not great... its a basic cutting skills. i used to watch back home butchers who cut goat meat / chevon its so fast without using a saw.
The saw is for cutting through bone. Interested in knowing how your hometown butchers dealt with bone in cuts. Most butchers wouldn't use a knife on cutting through bone due to the high risk of damage and dulling. Maybe you can post a video showing how they do it so we can learn.
Old hogget was hideous, poor conformation, poorly skinned at the abattoir, too much blade bone left in the best end (for profit! ). Pork too fat, chine left on chops (again for profit! ). All in all your typical average butcher.
I worked for a Dutch meat cutter his name was Hank Whisker. He would have scolded me for hitting the eye on that rack of lamb while cutting those bones. He was a good man. I learned a lot from him and others in our time together.
As a butcher myself i love seeing this guy work.

Why is your profile pic so childish do you actually work as a butcher?
I was a butcher and now a meat cutter at a upper end grocery store and I love seeing this
Man you are a pro ! Beautiful to watch you work

Great work and skilled!
Very efficient and clean cuts.
Most of the time we entente to abuse the service sector people.... We must be responsible for their contribution and hard works.
Tip top very clean and professional love it keep it man
i love this guy. Should be more like him.
Bravo maestro!
sempre i migliori!
Skilled butcher. Very nice cuts
Italian butcher knows what he's doing

You should explain what/where your are cutting for example what ribs you're cutting between for the people who do not know these things
Predator's skill.
I'm a meat cutter. Not a real butcher at all. But I would love to learn how to do this.
Good job

Hygiene rating is 4?, that says a lot.
Why is it still allowed to process / cut meat on wood in GB?
In Germany only on plastic.
please lock me in there with a BBQ and a loaf
я фигею.......super!
He is wearing the gloves.
I think a wealthy country like the UK does require one to put on gloves from hygienic and cross contamination.
there is no cross contamination in one piece of meat. Gloves are not more "healthy" than human skin - just wash your hands often.
Nice butcher
This guy must own the joint because no butcher I ever worked with would take that long to break up one lousy lame and keep his or her job
Yep, I along with 2 more people would fill 2 sixty foot multi tray counters in 2.5 hours before the store opened. then go for breakfast, back down and prep a load more before leaving.

settime2588 + What Kind Of Animal Are you Cutting ? is it a lamb, Goat, Or A Pig ?. thank you
Really good cutter thank you
why do butcher always "slap" the slab of meat when presenting in to the customer??
because its fun and lets us show off the rustic masculinity of what we do....
Because its nicer to slap the meat than the customers face when he asks a stupid question.
oh my gosh this was so funny i i and she is the one i she was like a woman who is a great woman and a good friend to the woman who is a woman and she was the woman that she is a good woman to me she is my life and my life she was like my life and my woman and she was so good and my woman is

Nice work, not very sanitary though, that butcher block needs resurfacing...I do this for a living also...Knives look like Victorinox/Forschner..
yes taken the blade away , which should not be there any way, just the tip, to much trimming ,
I love meat
A bit slow, He could have cut through the lamb chops with a sharp steak knife, his knives are blunt.
What language are they speaking?
Italian
Where are you ????
Why he aint using gloves

Glad Im a vegetarian. Video's like this are the reason why. Barbaric
Glad I'm a meat eater. Once saw a video of a cucumber getting minced alive, while still growing on the vine. Barbaric.
....he's great comediant, showman, but no professional - so much meat to garbage?
0:07 animal abuse
agreed, he should have more respect for the animal and not throwing it on the table like he did.
Killing animal is climax inferior work in world ,please become vegetarian ..
