This was great! I’m definitely, going to make 2022 a time to purchase and recreate these good-eats via many of these titles. I’m always amazed how most of my people (in spite of what little they had) made a way-create and innovate. My grandmother was known for her cooking in Antioch, NC. I cook now for my mother who suffers with Alzheimer’s /Dementia. My Ancestors have been calling me to look into these traditions. My grandma Inez died when my mother was 16. Mom is 78 now. I’ll be bringing in the New Year (2022) with all of the traditional eats to venerate my Ancestors. Again, thank you for turning me on to this marvelous Professor and subject-ASÉ
Excellent video. I constantly research Black American cooking styles. I had many of these titles in my arsenal, but lost them throughout the years . I want to recover all of these gems because the books were a base for my knowledge in cooking. I stopped and paused this video several times just to not down the titles so I could find them and buy.
I shall watch this video again and again to get all the names. We hear of recipes being adapted to modern tastes, I'm wondering does that mean sweeter or saltier, what was the taste of the bygone age from whence these recipes came. I am so glad to have stumbled across your video.
So the cooking influences of AFRICAN-Americans was influenced by indigenous Americans and Europeans but not Africans? Has anyone been to the Carolinas or the coastal Islands from SC to North Florida? A lot of Black didn’t have that much contact w/Natives.
