With the opening of Log Still Distillery in late 2020, Wally Dant realized a dream of returning to rural Kentucky, near Gethsemane, and his family’s homeland. Seven generations earlier, Wally’s great grandfather began distilling operations on the same property and established a bourbon legacy that lasted through the 1960s. As a young man, Wally sought a different career and became a successful entrepreneur in the healthcare industry, but he never forgot his family ties back in rural Kentucky. Wally started successful ventures in various segments of the beverage alcohol industry before selling those companies and moving back to Gethsemane to rebuild his family’s historic distillery.
When he made the decision to go full-time in the bourbon industry, Wally contacted his old friend, Jeff Hopmayer, CEO & Chairman of the Brindiamo Group, one of the largest bulk bourbon and whiskey suppliers in the world. Their children had grown up together in Nashville and Wally and Jeff shared a love for, and commitment to, the bourbon industry. The opening of Log Still was the perfect opportunity for these entrepreneurs to continue their relationship on a professional level, with Brindiamo supplying the first barrels of bourbon to Log Still.
Wally Dant works hard every day to bring his vision for Log Still Distillery to life. And to Wally, it’s about more than quality spirits. He wanted to build something unique on the bourbon trail in Nelson County. That’s when the idea of Log Still Distillery became a reality. Log Still Distillery is a unique hospitality destination that includes a network of wooded walking trails, a fully functional train depot, an outdoor amphitheater, farm-to-table restaurant, 12-acre lake for fishing and five bed-and-breakfast homes on the property that create an immersive experience never before seen in bourbon country.
