Spicy Foam Secrets: Chili & Wasabi Espuma Tutorial!

  • I will show you an easy way of doing spicy espumas at home. I will teach you 2 of my favorite ones, wasabi, and chili. Have fun guys
    Wasabi foam
    - 300ml heavy cream
    - 1 wasabi paste
    - 5ml of vinegar
    -10g of miso paste
    - 20ml of mirin
    - salt and pepper to taste
    - xanthan gum and green coloring as you need
    Chili foam
    - 2 onions
    - 2 red bell peppers
    - 5 habaneros or different chilies (you can do more or less depending on your spicy taste)
    - fresh ginger
    - 100ml of white wine
    - 100ml of heavy cream
    - salt and pepper to taste
    - butter or oil to start
    - xanthan gum as you need
