Abhijit, there are lot of states where groundnut oil is the staple.
In Central and South India , millets are a staple. It is more widely eaten than rice. Rice is a staple only since the last 3 decades after the government started giving low cost rice in PDS.
🙋 Being Sindhi Punjabi I hate tomatoes in my vegetables and daals. For that I had been dissed in whole of my family.
In erstwhile east bengal,there is distinct difference between the veg and non veg food.Our windows used to cook thousands of varieties of foods without using onion, garlic even ginger in it .Foods were not only superior in taste but healthy also.My granny used to cook water hyacinth also.

Paneer is overrated. There are a lot of other stuff in veg which non-veg people are unaware of.
Overrated or not I still love paneer. I hate jackfruit which is a new norm in veg cuisine. It's about taste and preference.

True there was no Garam Masala, onion or garlic in Tamil Brahmin cooking still taste is good. I have used Garam Masala after marriage for making North side of India's cooking.My childhood time my parents used find Garam masala as a spice for Non veg cooking. We used Garam Masala only.for Briyani.

Fresh Cow milk, buffalow milk, are good and ghee from these. And curd and butter milk. Now most of the dishes people cook with curd. In olden days very few dish with curd. Curd should be taken raw cooking curd should be avoided aauch as possible
Ghee and butter was is and will never be GOOD . It creates obesity and heart disease . So north and north westeners should STOP glorifying it
@@SamDy99 you are absolutely wrong. Ghee is the best fats there are, saturated fats are the best. Vegetable oils, edible oils, seed oils whatever term you wish to use, are the most unstable fats and Infact the leading factor of cancer in the world today. Stop with your nonsense and come to senses.

I still have no idea what dishes were there in Tamil Nadu 1000 years ago. There is very little record or recipes from that era.
Manasollasa by Someshvara does give info on the recipes of South.
Not besan in West Bajra and Jowar are the main carbohydrates.

Uniquely I too hate this obsession with PANEER . I used to be ina travelling job and suffered a lot in North india. I was kind of starving for Bhagiis. I belong to Chattisgarh , we still have lot of bhajiis used in our diet. Don't know how long will this exists before we convert yourself to punjabi . Our restaurants have almost forgotten local cusines.
@N M Great , thanks for understanding, very few understand this pain. Also if you travel inside just few year back, you would have got different mugodas, and a different kind of lemon tea was prevelant, much before it became know else where , but know its all same cutting . :(
My own memorable of great food is at the Langar at Gurudwara Guru Gobind Singh Ji on Manali-Mandi route. It was just rice, dal and rajma. Both dal and rajma seemed to be very lightly spiced, but it was so delicious. Similar experience iRaghavendra Swami math in Mantralaya in Andra Pradesh- just rice and saaru (like rasam). More delicious and satisfying than any restaurant food.
