      +PalmTree Moe sorry but caramelized food does not look black unless you don't know how to cook. Black is burnt. Caramelized is usually a light brown, caramel color. hence CARAMELized. do you usually "caramelize" your onions in a pan by cooking them until they are blacker than the night??

    Looks scrummy! The bark is a bit too burned for me, though. I think I'd put some kind of basting liquid (which would include apple juice) into a spray bottle, and baste it with that for most of the time, then baste it with the bbq sauce during the last 15 minutes. I'd definitely include the bbq sauce on the inside for sure, as well as that rub, mmm!
    Thank you for posting, I'm definitely gonna try this!!

    I made this the night before that comment, at 220C and the bark was sticky and firm. It may look like it but try it your self, its not burnt. take for gran-it the BBQ sauce is a bit burnt but that's what makes it good and flavorful. Also the meat it tender and good, not even remotely burnt.

    basting the bacon with BBQ sauce from the beginning is a BAD idea as shown here... The sugar in the sauce BURNS to a black nasty mess.. If you really want BBQ flavor, then keep the sauce inside and only sauce the outside when it's nearly done... ... Or better yet, cook over a WOOD fire with smoke at a very low heat for a very long time. Also, I've done these recipes before and only part of the bacon ever gets cooked. The part that's wrapped underneath other pieces of bacon usually aren't cooked through, and it's just not good. The weave thing LOOKS cool, but doesn't cook the bacon. If you're going to wrap it, then just wrap it in a single layer of bacon so ALL of it gets cooked. His finished product looks horrible and inedible, no matter how great the idea of it seems.

    • @Jawbreaker877417
      @Jawbreaker877417 9 лет назад

      maybe bake the bacon for like 5 minutes (so its partially cooked but still really flexible) and dont add the bbq sauce until its almost finished

    throw the ground pork log in the oven to get it going. make bacon weave. bake bacon weave at 300 degrees for about 5 minutes. roll up the pork log in the bacon weave (which has started cooking but still very flexible). make sure u have greased or oiled the bottom of the pan, put wrapped log in. loosely cover the whole thing in tin foil and throw it back in the oven. using a meat thermometer wait til it hits about 140 degrees then remove foil to crisp bacon, top with shredded cheese or smother with bbq a few minutes before that bad boy comes out of the oven.
    final temperature (after sitting) should hit at least 160

    if its burned you did it wrong. try using indirect heat of you're doing it in the grill or smoker. use a meat thermometer, you want it to get to internal of 160. I always wait to apply the outside coating of bbq sauce because that does burn. add cheese, jalapenos and garlic to the internal ingredients and crushed red pepper to the rub if you want spice.

    I want to try it, but I think I want to do the bacon lattice, then put the flattened sausage on the lattice, then roll the bacon and sausage so there's bacon inside the roll. I may pass on the bbq sauce on the outside, but definitely gonna use the rub. Put it on the smoker with some fresh maple wood or maybe some crabapple wood.

    I made this a while back, instead of using regular ground pork meat I used ground Italian Sausage! OH, BOY! Also, baked some Pillsbury's Grands biscuits and made sandwiches... If I had died, it would have been with the biggest smile on my face that I have ever had. Feeds about 6.

    The sugar in the bbq sauce caramelized in the heat of the oven probably because it was a little thick for basting.

    Just made it, your directions are almost perfect, except the timeline could be a bit more exact, other then that, its in the oven, and it smells/looks like heaven on a plate!

    Wrap it in foil with open ends so the juices can flow.. the last 5-8 mins, take the foil off and dont roll it, just open it.. then you get a the right color and consistency

    Although it doesn't look the best, the bacon explosion is awesome. You can also try it with italian sausage instead of pork.
