  • Crispy Sardine Quiche with a French Twist | Recipe Inspired by: ‪@FoodiesofSouthAfrica‬
    Serves: 8
    Using my favourite Sardines, from ‪@LuckyStarSA‬
    Ingredients:
    • 1 sheet of store-bought puff pastry
    • 3 tins Lucky Star Sardines in vegetable oil
    • 1 cup cherry tomatoes, halved
    • 1 cup feta cheese, broken into smaller pieces
    • 3 eggs
    • 1 tsp Dijon mustard
    • 3⁄4 cup cream
    • Salt and pepper, to taste
    Serving Suggestion:
    • 1⁄2 cup fresh basil • Side salad
    • Crème Fraiche
    1. Preheat the oven to 200°C and grease a round 20cm springform baking dish.
    2. Roll the puff pastry out over the baking tin and press the dough firmly into the base and up the sides
    of the pie dish.
    3. Use a butter knife to cut the excess pastry off before pricking the base with a fork, creating holes that
    allow the steam to escape. Then Chill the pastry in the fridge for 30 minutes to stop it from shrinking
    when baked.
    4. After chilling, lay a piece of baking paper over the pastry base. Pour a cup of baking beans or rice into
    the base and bake for 15-20 minutes or until the edges of the pastry are golden brown.
    5. Take the pastry base out of the oven then reduce the oven temperature to 165°C. Remove the baking
    paper and beans from the dish and allow the pastry to cool while you prepare the custard filling.
    6. Open all the Lucky Star Sardines in vegetable oil tins and split the fillets into halves lengthwise.
    Remove the bones if preferred.
    7. Whisk the eggs, Dijon mustard, cream, salt and pepper in a medium-sized mixing bowl until smooth.
    Pour the custard mixture into the prepared baking dish.
    8. Neatly arrange the halved cherry tomatoes, feta cheese and sardine fillets in the pie dish.
    9. Bake the quiche for 35-40 minutes or until the top layer is lightly golden and firm to the touch.
    10. Allow the quiche to set for 10-15 minutes before serving. Garnish with a handful of basil leaves alongside a fresh salad and a dollop of Crème Fraiche and ENJOY!

      It’s was soooo tasty! The sardines just have such a beautiful flavour when combined with the rest of the ingredients. I even Airfried it for breakfast, was over tops Judy 👌🏽🔥🥰
