  • How to make a creamy garlic peppercorn sauce. This recipe is super easy to make and the flavours are unreal. With easy-to-follow instructions, you'll be making the most delicious sauce in no time. You guys loved my creamy garlic mushroom sauce and the garlic sauce so here's another. Enjoy.
    Ingredients -
    3 Tbsp (42g) - Clarified Butter
    1 - Brown Onion, Diced
    4 - Garlic Cloves
    3g - Flat Leaf Parsley
    3 - Thyme Sprigs
    2 Tbsp (30ml) - Brandy
    50ml - Beef Stock - • How To Make Beef Stock...
    3 Tbsp (15g) - Cracked Black Pepper
    10g - Green Peppercorns
    450ml - Full Fat Thickened Cream
    Salt to taste

    Jack, that is best video, you didn’t just show the recipe, but gave little tips all through eg. the cutting of the onion and when to add garlic and how long to stir it - all contained in a video about sauce.

      Hey Ziad, I think he uses clarified butter because it has a higher smoke point, making it ideal for sautéing. You don't want the rancid of bits of burned butter in a sauce.

      The reason being is exactly what Davide has said. It has a way higher smoke point (burning point) than ordinary butter.

    Hey Jack. Made it today. I put a ton of pepper but only thing I could taste was the thyme. Dunno gonna try it again with even more pepper

      Hey, Mark. Check the notes in the description for a more peppery flavour. This original base is quite mild on the pepper so it’s not overpowering but I’ve got additional nots for adding in more pepper 😊. You must have very strong thyme too 😊

    Interesting that you decided to use clarified butter instead of normal butter! Health reasons?

      Clarified butter has a higher smoking point than ordinary butter. This way we can saute the onions and garlic without the butter burning and becoming bitter.

      I guess clarified butter worse to your health than regular butter but it is better.

      Being a butter, it’s still best to eat it in moderation but clarified butter or ghee is found to be better for the gut.

      You can substitute the brandy for white wine. If you can’t consume alcohol, it can be substituted for vegetable or chicken stock. 👌

      You can but I wouldn’t recommend it. It will become very watery. This can be fixed however by adding a small amount of cream when reheating.

      The best way would be over a water bath. You can put the sauce into a bowl and put it over the pot of simmering water, just make sure it’s not touching the water. You will have to gently stir it every now and again to prevent it from splitting or getting to hot.

    What can I substitute cream with? Milk?

      You can however the milk wont reduce and become thick. If you are to use milk you will need to add flour to thicken it, which will change the flavour and texture of the sauce.
