  • We get a lot of questions about our Kaiten, this is Eli ( @litvvs on Instagram) building it with a new grinding wheel, vintage hubs and axle and new bearings from Japan. Sadly we don't really have a source for y'all for the Japanese components as a friend hooked us up and isn't in the business of supplying that stuff but it's out there.
    I had been using Kaitens in Japan on visits since 2018 and got a few great pointers to start with but being able to thin and regrind knives has been a lot of fun if not humbling at times.

    Great Video! two questions...what approximate grit equivalent is the wheel? Why do the Japanese sharpeners lean over or use extendable wooden arms to place the knife on the other side of the stone?
