    My spouse discovered your channel recently; immediately, we were hooked, tuning in nightly to enjoy so much the vast knowledge and good humor. I made a chicken soup with orzo including stock from scratch today, and everyone loves it! I recalled Chef saying if we wanted to we could start with bacon before the onyo, so i did!! Yum, to say the least.
    So much appreciation from South Dakota! and yes, it is cold and sparkly outside with a classic layer of actual six-sided snowflakes ; )

      @@DianeHardin-ri4qt when you make this soup, or just plain chicken noodle soup, add fresh grated ginger and turmeric. They are both powerful antioxidants and may help you to recover faster. (I add both all of the time). Or, better yet use Chef’s Curry recipe-it’s packed with serious antioxidants!

    Looks super easy. I'd agree with bringing home a whole chicken to keep the soup budget in line. You need the carcass 100% for the stock and those flavors will beat out any boxed stock.
    My only commentary for the Chef would be to allow his dishes to cool, or edit out the wait time from the video, before tasting them. We feel the pain as much as he does and it ruins the taste test for us. LOL.

    I think I learned to love soup from my father, who was always making different soups. You remind me of him, including the French accent. He passed away a few years ago.

    I made this today…it was truly fantastic! I wouldn’t have thought of adding curry, but wow! Easy to make, just takes some time. I started using all your techniques including the towel in the bleach water….works great. Using “mice en place” makes cooking so much easier!! Thank you so much for posting everything you have done. I just keep learning and love the results…so does my wife!

    I'm addicted to making stock. It's fun, cooking, and scientific all at the same time. My local store sells chicken backs for $0.50 per pound. I use them to make the secret ingredient that really does make my cooking better. If you use fresh corn in this recipe, you should throw the cobs (corn bones) into the stock pot for even more flavor.

    Love the recipe, thanks chef! The sage and curry sound like perfect complimentary flavors to chowder I had not considered before, and you've inspired me to try them.
    For anyone that happens across this comment that loves variations like I do, try adding a roasted/peeled/diced poblano pepper and roasted corn on the cob (roast them while the other veggies are cooking and add at the end). They bring a wonderful vegetal earthy/roasted flavor that work very well with creamy chowders.

    I have health & ‘burned tong’ problems w/'Too Much salt'. I heard you say there was both "a test for when there was enuff salt" /&/ 1 for "when too much salt” in another vid. Today I learned the 1st with “take a lill bowl & begin seasoning that” compare to our’s currently cooking, adjust till getting a match. Thanks for encouraging our ability to know our personal taste preferences yet again! (decade or 2 ago I saw chef’s remove salt from the dinning table @ their establishments. Not the 1st era for that). Will try this variation when Ive finished ur bouillabaisse (containers stacked in fridge) as THIS is My time of yr for stews’n soups. Wood stoves drys the nasal passages, these warm the bod. and help the nose !

    We opened a restaurant last July. It was just going to be a typical dairy bar (ice cream, burgers, hotdogs). But me being one that likes to set us aside from being like everyone else, I have a menu that amazes people. We offer Mahi Mahi, Red Snapper, Grouper, and catfish is big in our area. I've been adding a daily special that's not a menu item and people are blown away by what we offer. You have inspired me to want to learn more. I have no professional training, just the love of cooking. But I'm looking into culinary school, because I want to know more. I want to understand all the science behind it. Thank you Chef!!! You are definitely my inspiration. I made my first Beef Wellington for Christmas from your recipe and my family was amazed!! And so was I. Thank you so much. Keep inspiring!!

    Made this today and it is delicious! Used store bought stock just because we had enough of it but it it was still great. I'm sure it will taste even better tomorrow.

    Its a bit cold in Texas today, I had planned to make chicken tortilla soup...got ready to watch chef after my Yoga with Adriene video this morning. My husband said, 'lets make this chowder instead.'. Great call! We made it, it WAS DELICIOUS!!!! VERY EZ...keep the soups coming chef, we may get a lot of snow later this week, ugh 😡😡. At least we have sunshine...that's YOU chef Jean Pierre! 🌞🌞🌞

    I'll be roasting a chicken for company this coming weekend, so I will make stock, as I always do, from the bones and trimmings (and pan drippings). I have good local carrots, leeks and and onions from the last farmers' market in November, and corn from a market in August, bought fresh-picked, cut off the cob, and frozen. This may be my soup next week.

    Soup is so important. What a hungry/starving man needs first is bread and water. Right after that comes vegetable soup with some meat if possible. Here's a fine soup- I especially like the sweet corn crunch!

    My girlfriend added chicken stock to our shopping list… I replied there’s chicken stock in the freezer chef and I made… needless to say, she used the homemade stock. 😊

    I usually prefer a smooth texture soup, but I made this today just like this including the chicken stock and I left it chunky with no blending. Absoluely gorgeous soup, and you are right chef, perfect warming winter food, it's minus 5 degrees here in the UK and this was a real winner. Anyone that's never made real homemade stock and uses either dissolvable cubes or ready made from the supermarket, trust the chef when he says it's worth the effort, the difference is night and day. Not just for the taste, but for the health benefits as well. Thank you chef for another amazing recipe, I will definitely be making this again ❤❤

    Good Morning! When I buy stock from the store, I always buy the unsalted kind for this very reason. I also use it very often even if my recipe makes its own stock. I find it fortifies the dish. If I need more liquid the no-salt stock goes in.
    In my head I always hear "Why would I want to add water? Water tastes like NOTHING!!!" 😉😉😉
