Your Scallion Pancake Recipe was AWESOME!!!! I used it as the base for a kind of Asian inspired Taco. It was literally, the best thing I've ever eaten thanks to that amazing Scallion Pancake! I put a layer of Sriracha Mayo, Korean Bulgogi, and Asian Slaw with a Kiwi Mayo onto the Pancake. O.MG.! Yummy! The Scallion Pancake was and remained crunchy, layered and delicious & held up beautifully to the other strong & distinct flavors. Thank you again for this recipe. I will be using it again & again. :)
When I went to Kenya my friend taught me how to make chapati. This is basically chapati with onions. A wonderful shared tradition between Africa, India and east Asia.
Fun Fact: ALL Asian , & India/Mid Eastern dishes originated from my Beautiful Motherland AFRICA! And of course over time in and from locally grown foods these dishes have evolved into a variety of different ways to create more delightful courses.

I also thought it would be great with lamb or chicken curry! Then I noticed below, someone said it reminds them of an Indian chapatis with scallions. It only shows we are all connected in some way. Learning to use different techniques in cooking, is like learning another language. There are different ways to express yourself and it can be so insightful. I hope that makes sense?
It is quite similar to the South Indian paratha that is commonly sold in Singapore, Malaysia and Thailand. The difference is Indian Paratha do not use scallions but can add shredded red onions or eggs upon request. Normally it us sold as plain crepe or pancake. It goes well with chicken or lamb curry and is usually eaten as a breakfast meal or a light snack. In Thailand, it is normally eaten with condensed milk or chocolate cream or peanut butter. In Singapore and Malaysia, the dish Paratha will change its name to Murtaba if friend minced chicken or Lamb is used as the fillings. The minced chicken or Lamb are normally pre-fried with spices until dry. The fried minced chicken or Lamb will be sprinkled onto the dough exactly like how is done with scallions. The ready pancake will have lamb or chicken curry as dip. The Indian cooks instead of using the roller will use flipping techniques until the dough is very thin sheet and it is amazing to watch them do it.

I have been cooking since 7 years old (Easter, 1965). I took eggs from my brothers "Easter" basket treat package & mine to make 'Deviled Eggs', but I put too lmuch mustard in the batter. This was my first "Fail" breakfast meal, and my family was not happy! My Mom had colored the eggs with a beautiful design the night before.. I am making this today. The dough is resting in the fridge as we speak. The dough was such a pleasure to work with. From a comment on Chef John's video of the same, I'll add the white part of the green onion to the oil while heating it for more flavor. I won't get creative though. Just your basic recipe and I'll see how I like it.

Thanks for putting gram weights in your You Tube recipe, which is NOT on your website recipe. I was initially confused whether water amount was by liquid measure or 3 1/2 ounces by weight like the flour. The gram weight resolves that issue completely. Big thanks for a clearly explained recipe and technique. I love watching you explain and cook.

Hello from Sydney! I've just made these pancakes for the first time using your recipe and method. This might sound weird but I didn't have all-purpose flour, so I used bread flour instead. I don't have cling wrap so I put the dough in a zip lock bag with some oil in it. I tried squeezing as much as air out of the bag. The dough didn't have the "dry skin" spots. And they turned out AEWSOME! I ate them plain with my own dipping sauce concoction consisted of soy sauce, dark soy sauce, sesame oil, sesame seeds and chilli flakes. Thank you for sharing!
