I just made candied cranberries yesterday. I did the boiled simple syrup version. Plus I tried both powdered sugar and granulated sugar. The taste from the powdered sugar can give off the floral soapy taste. I did not like that at all. The cranberries using the granulated sugar don’t have that weird soapy flavor at all. Plus after keeping them in the fridge for a couple hours, they tasted even better and more of them firmed up so they popped better. Now I have them in the freezer so I will see how that goes.😊

I made the orange soaked ones, only overnight, 8 hrs soak. We all enjoyed them, and hubby drank the cranberry soaking OJ. Love these! Am thinking they would make a lovely topping for a winter pavlova or chocolate torte.

You don't get much flavor from the liquid. It's more to make the sugar stick. There's a tiny amount of OJ taste. Now I have known folks that poked holes in them and they had more flavor. I have been making these for over 10 years I generally use prosecco and OJ. @@christinacody8653

I can't imagine cranberries soaking up much of the juice when their skin isn't pierced at all. It seems more like dumping the cranberries directly into the powdered sugar brings along some residual juice, and you're tasting that. Which would make sense if the difference between the soaked and non-soaked orange ones is negligible.
Yes, another recipe says to heat up the cranberries in a pot just until their skins begin to pop - or separate - enough to allow the orange juice and Spite to be absorbed by the cranberries.

I've been making these for years for any get-togethers not just around the holidays whenever I can get the fresh cranberries. I've used ginger ale, but my son's favorite is made with cherry 7-Up. I have, and the weight increase was minuscule at best, basically just the amount of liquid that clung to the exterior of them. Both times I made them I only soaked them for about 10-12 hrs tho, maybe 24hrs is better 🤷🏼♀️

I made a big batch of these on Christmas eve morning to take to work. I soaked and weighted them down in a Sprite and HEAVY pulp orange juice over night. The result after coating and baking them was great. The extra pulp gave that sharp citrus flavor and the Sprite helped round out the sweetness with the powdered sugar. My coworkers loved them and the leftovers I brought home were a hit - even with the kids. Some of them did have a stronger bitter note than others, but overall I was surprised how nice they turned out. Plus they were super easy to make.
Minor pet peeve, but those aren't "candied". They're just coated in powdered sugar. Candied would actually change the structure of the berry, and would preserve it to last longer. For example, candied citrus peels or comfits.
I have cranberries i lacto fermented with clove, cinnamon, ginger, and Nutmeg. I think they would be a nice version of this. I'm gonna try it but with a recipe I saw using simple syrup.
So I did this the week after Thanksgiving because cranberries were on sale and I already had orange juice and powdered sugar. I washed my cranberries well, inspected them to remove and soft or shriveled ones, put them in a bag with about a tablespoon of orange juice, let them sit for around 10 min, drained the OJ, added a few cups of powdered sugar, tossed to coat then baked. They came out fantastic. Good crunch and a tiny bit of orange flavor from the juice. I will say sometimes you'll run across a very floral tasting cranberry which can read as soapy to a palate that isn't accustomed to floral flavors. Overall it's a pretty inexpensive, delicious, and healthy snack. Just got to the part where Emmy commented on the floral taste, lol.
Cranberries have a very tough outer skin, which helps preserve the pop from the air trapped inside. You'd have to puncture that skin to get liquid inside the actual cranberry and if you did that I don't think it would cook or eat the same.
I made the Prosecco and orange juice variety…it soaked for48 hrs as I forgot about them…I drained them, added icing sugar to the container and shook…then onto a sheet tray and in the oven at 200 for 6-8 or ten minutes …then 12 hours in the fridge…everyone loved them…even the pickiest people..I brought regular cranberries to have people test after and there were alot of sour faces! So this recipe was a huge hit…I had to make three more bags. A tip is to sprinkle icing sugar lightly over the ones that may look bare after putting them on a sheet tray and then put them in the oven. If a few pop a bit in the oven repeat with a sprinkle of icing sugar to those and put them in the fridge. Also they can be eaten within 6-10 hrs if you like. They are great!

The recipe I first saw online said to put the cranberries in a pot with just a little water and bring them to a point until they started to "pop" in the pot, then turn it off and soak in orange juice and Sprite. This allowed the skins to stretch a bit to allow the flavored juices to soak in. Then she rolled them in confectioner's sugar to bake. I would think the soar taste would not be as evident that way.
I'd be curious about using orange soda to create a best-of-both version of the orange juice and sprite options. You'd get the orange flavor plus the extra sweetness.

I soaked white grapes (smaller ones are best) in Prosecco overnight then coated them in granulated sugar and put on a sheet pan and froze them. They were pretty good. Same when I made them. Those that like cranberries liked them and those that don't, didn't. I'd stay away of you don't like traditional cranberries. The flavor and tartness is still there. Just minimized a bit.

I'm very curious how this will go. I love cranberries. I made my cranberry sauce with a quarter to a third of the recommended amount of sugar (cranberries have a lot of pectin, so it still thickens with way less sugar). I like to cook the lighter-colored berries first, then when they turn jammy I add the darker (sweeter) berries and cook it all until the dark berries just start to pop. That way there are still whole berries to delightfully pop in your mouth as you eat. I like to add a little grated ginger to my cranberry sauce, just before I take it off the heat.
I'm actually glad you're doing the experiment because I've made them twice with oj and prosecco, soaking only 3 hours for the first time and 24 hours the 2nd time and I don't know that I could taste it at all in either. The batch I soaked for less time I baked at 200 for 5 mins and longer soak I baked for 10 mins. Way too long, they shrank a tiny but and some of the Powdered sugar cracked off.
Made these with the Winter Cranberry Sprite. I poked a hole in every berry to see if it would help. I let them soak for a few days because I didn’t have time. They were a big hit with everyone this Christmas. Will try other versions. The OJ/Proceso version next. I used them also as decorations on my Yule log.
I make a simple syrup with orange liqueur. Placed over heat, but not brought to a boil. Stir in the cranberries and leave overnight with a plate on top to keep the cranberries submerged. The heat of the liquid softens the cranberry skin just a tiny bit so the liquid can soak in. Leave overnight then drain. Roll in regular granulated sugar and let dry. They absolutely absorb the liqueur and sugar and they do pop in a satisfying way. I don’t like powdered sugar on them.
I live in Iowa. These are a Christmas time tradition. You can make this candy by soaking in various carbonated and citrus like juices (even pineapple juice). The sweet tart candy is addicting!
@@berngirl5624, cranberries are naturally waterproof unless rotten or pierced, so poking would only allow the liquid inside. So, yes, it would take away the popping if liquid was boiled inside by the oven method. Similarly, ice would form inside by the freezer method effecting the pop. However, puncturing it and a 15 min soak and instant coating you would get a pop just not as crackling.
Fun! I made cranberry jam yesterday. I looked to see if fresh cranberries were still available and found only frozen! I would have red this for New Years! I will be sure to save it for next year. As for the jam, a white cake trifle, got the glass on a stand, fresh whipped cream to make, cranberry jam in layers between. Should be delicious! Happy New year Emmy!

Ive been making and eating these by the BAGFULL. Made them for a Family Christmas party and they were a smash hit. The soaking and slight baking time take that bitter bite out of it while still remaining tartan. Love love love them
My Sister-in-Law made these for our Christmas and they were fantastic!! Yes, they are extremely tart, but the balance with the powdered sugar coating made a delightful Apéritif to cut through all the over-sweetness of the holiday!

I love that you've tried different soaks, so I don't have to. Lol I made some 3 days b4 your post with a sparkling apple-raspberry non-alcoholic, and they were lovely. They looked very festive in a candy dish on our appetizer table. I know they made it into leftover bags of multiple guests Christmas night lol
When I made these, I used 2 oranges,1 lemon. Zest all 3 then juice them into a measuring cup. Add enough sugar to make a thick simple syrup. Cool it then toss the berries. Use a slotted spoon to transfer into the powdered sugar. Dry on sheet pan in a single layer. The cranberries have a very sturdy skin, soaking doesn’t make much difference and just adds time. You cand add spices or flavoring to you syrup.
My daughter made these with orange juice that soaked for 18 hrs. I hadn't heard of this recipe til Christmas day. I loved them and am still picking away at them!!! I gave some to a friend that stopped by today. I am a maker of vanilla extract and paste so I'm going to experiment with a combo that adds a bit of vanilla as well. Another way to make candied cranberries is to add cranberries to warm sugar water, cook for one minute, then remove them from heat to a rack to dry. Once dry, they will have a slightly sticky coating and can be rolled in granulated sugar and served as is with no baking. They are delicious!

I made these for the first time this year and loved them. One batch got left in oven longer than recommended and the shell got hard but the cranberries cooked. They still popped but the flavor was better I think.
I feel like there are so many recipes for these.. I use lime juice and the granulated sugar for them to sit a few then I do the powdered sugar. I just really like the lime juice with the cranberries.

I was thinking about using a sparkling blood orange drink (non-alcoholic) that our local store sells and how it might be an interesting version to try.
Me, my coworkers, and my family actually loved this recipee. I took two bags of cranberries and washed them. let them dry on a towel. Then put them in a container of a mixture half of Welcher's white grape sparkling juice and half pure pineapple juice. Left them in the fridge for 24 hrs. Then took them out and drained the liquid off. Put a bag of powdered sugar and the cranberries back in the container and shook till fully coated. Then dried them in the oven at 200 degrees for 6 minutes. They were phenominal. Next time I make them I will poke tiny holes in the cranberries to soak in more of the juice mix.
I tried it soaking them in rootbeer soaking for almost 2 days. I know I know but it was phenomenal. Almost like rootbeer barrel for a moment before the hit of tart. So so good.
I have a big party to go to this coming Sunday to end the year. I may just take these just for the fun of it. It looks like I can make them in a hurry, and have enough for 50 to 75 people without breaking the bank totally. I love cranberries, and tend to prefer my cranberry sauce on the tart side. I'm kind of curious about these now, despite what looks like an abundance of sugar. I also love cranberry with amaretto. I believe that the soak in your acidic marinades removes the naturally acuring wax allowing the sugar to make a better shell.

Confit--as in short for confiture of fruit. Confit of other foods aren't the same, but it is a catch-all term meaning preserve.

I washed my cranberries well, inspected them to remove and soft or shriveled ones, put them in a bag with about a tablespoon of orange juice, let them sit for around 10 min, drained the OJ, added a few cups of powdered sugar, tossed to coat then baked. They came out fantastic. Good crunch and a tiny bit of orange flavor from the juice. I will say sometimes you'll run across a very floral tasting cranberry which can read as soapy to a palate that isn't accustomed to floral flavors. Overall it's a pretty inexpensive, delicious, and healthy snack.

Hmm. If you have a vacuum sealer you could add the liquid and seal for a few hours. Wonder if that would add more flavor.
Cranberries have a very tough outer skin, which helps preserve the pop from the air trapped inside. You'd have to puncture that skin to get liquid inside the actual cranberry and if you did that I don't think it would cook or eat the same.

I made the Prosecco and orange juice variety…it soaked for48 hrs as I forgot about them…I drained them, added icing sugar to the container and shook…then onto a sheet tray and in the oven at 200 for 6-8 or ten minutes …then 12 hours in the fridge…everyone loved them…even the pickiest people..I brought regular cranberries to have people test after and there were alot of sour faces! So this recipe was a huge hit…I had to make three more bags. A tip is to sprinkle icing sugar lightly over the ones that may look bare after putting them on a sheet tray and then put them in the oven. If a few pop a bit in the oven repeat with a sprinkle of icing sugar to those and put them in the fridge. Also they can be eaten within 6-10 hrs if you like. They are great!

My daughter made the powdered sugar cranberries and the were DELICIOUS!! Addictive!! Loved them.
The recipe I first saw online said to put the cranberries in a pot with just a little water and bring them to a point until they started to "pop" in the pot, then turn it off and soak in orange juice and Sprite. This allowed the skins to stretch a bit to allow the flavored juices to soak in. Then she rolled them in confectioner's sugar to bake. I would think the soar taste would not be as evident that way.

I'd be curious about using orange soda to create a best-of-both version of the orange juice and sprite options. You'd get the orange flavor plus the extra sweetness.
I made these like 2 weeks ago and sprinkled a bit if Cinnamon over some of them right before popping them in the oven and oooooomg it was soooo good that way!! I loved the ones with the Cinnamon the most!

I soaked white grapes (smaller ones are best) in Prosecco overnight then coated them in granulated sugar and put on a sheet pan and froze them. They were pretty good. I made them a week after Thanksgiving, and I was the only one who liked them. But then again, I'm the only person in my family who likes real cranberries too.
Same when I made them. Those that like cranberries liked them and those that don't, didn't. I'd stay away of you don't like traditional cranberries. The flavor and tartness is still there. Just minimized a bit.

I'm very curious how this will go. I love cranberries. I made my cranberry sauce with a quarter to a third of the recommended amount of sugar (cranberries have a lot of pectin, so it still thickens with way less sugar). I like to cook the lighter-colored berries first, then when they turn jammy I add the darker (sweeter) berries and cook it all until the dark berries just start to pop. That way there are still whole berries to delightfully pop in your mouth as you eat. I like to add a little grated ginger to my cranberry sauce, just before I take it off the heat.
I'm actually glad you're doing the experiment because I've made them twice with oj and prosecco, soaking only 3 hours for the first time and 24 hours the 2nd time and I don't know that I could taste it at all in either. The batch I soaked for less time I baked at 200 for 5 mins and longer soak I baked for 10 mins. Way too long, they shrank a tiny but and some of the Powdered sugar cracked off.
Made these with the Winter Cranberry Sprite. I poked a hole in every berry to see if it would help. I let them soak for a few days because I didn’t have time. They were a big hit with everyone this Christmas. Will try other versions. The OJ/Proceso version next. I used them also as decorations on my Yule log.
I make a simple syrup with orange liqueur. Placed over heat, but not brought to a boil. Stir in the cranberries and leave overnight with a plate on top to keep the cranberries submerged. The heat of the liquid softens the cranberry skin just a tiny bit so the liquid can soak in. Leave overnight then drain. Roll in regular granulated sugar and let dry. They absolutely absorb the liqueur and sugar and they do pop in a satisfying way. I don’t like powdered sugar on them.
I live in Iowa. These are a Christmas time tradition. You can make this candy by soaking in various carbonated and citrus like juices (even pineapple juice). The sweet tart candy is addicting!

I've seen a few of these recipes also call for poking a hole in the Cranberries to allow the liquid to oenetrate.

@@berngirl5624, cranberries are naturally waterproof unless rotten or pierced, so poking would only allow the liquid inside. So, yes, it would take away the popping if liquid was boiled inside by the oven method. Similarly, ice would form inside by the freezer method effecting the pop. However, puncturing it and a 15 min soak and instant coating you would get a pop just not as crackling.
Fun! I made cranberry jam yesterday. I looked to see if fresh cranberries were still available and found only frozen! I would have red this for New Years! I will be sure to save it for next year. As for the jam, a white cake trifle, got the glass on a stand, fresh whipped cream to make, cranberry jam in layers between. Should be delicious! Happy New year Emmy!

Ive been making and eating these by the BAGFULL. Made them for a Family Christmas party and they were a smash hit. The soaking and slight baking time take that bitter bite out of it while still remaining tartan. Love love love them
My Sister-in-Law made these for our Christmas and they were fantastic!! Yes, they are extremely tart, but the balance with the powdered sugar coating made a delightful Apéritif to cut through all the over-sweetness of the holiday!
I have a friend who grows them she lives in PNW. She grows them for ocean spray. I love cranberries but never eaten them raw.

When I made these, I used 2 oranges,1 lemon. Zest all 3 then juice them into a measuring cup. Add enough sugar to make a thick simple syrup. Cool it then toss the berries. Use a slotted spoon to transfer into the powdered sugar. Dry on sheet pan in a single layer. The cranberries have a very sturdy skin, soaking doesn’t make much difference and just adds time. You cand add spices or flavoring to you syrup.

I gave some to a friend that stopped by today. I am a maker of vanilla extract and paste so I'm going to experiment with a combo that adds a bit of vanilla as well. I made sugared cranberries with granulated sugar and simple syrup and much preferred them over the powdered sugar!
I used a Sprite and Orange soda mixture and it was SO good!
Another way to make candied cranberries is to add cranberries to warm sugar water, cook for one minute, then remove them from heat to a rack to dry. Once dry, they will have a slightly sticky coating and can be rolled in granulated sugar and served as is with no baking. They are delicious!

I made these for the first time this year and loved them. One batch got left in oven longer than recommended and the shell got hard but the cranberries cooked. They still popped but the flavor was better I think.

I feel like there are so many recipes for these.. I use lime juice and the granulated sugar for them to sit a few then I do the powdered sugar. I just really like the lime juice with the cranberries.
I always make my cranberry sauce with orange juice. Not a big Proseco drinker though, so I think if I try this, I will do it with an OJ and Sprite combo.
I was thinking about using a sparkling blood orange drink (non-alcoholic) that our local store sells and how it might be an interesting version to try.
Me, my coworkers, and my family actually loved this recipee. I took two bags of cranberries and washed them. let them dry on a towel. Then put them in a container of a mixture half of Welcher's white grape sparkling juice and half pure pineapple juice. Left them in the fridge for 24 hrs. Then took them out and drained the liquid off. Put a bag of powdered sugar and the cranberries back in the container and shook till fully coated. Then dried them in the oven at 200 degrees for 6 minutes. They were phenominal. Next time I make them I will poke tiny holes in the cranberries to soak in more of the juice mix.

I tried it soaking them in rootbeer soaking for almost 2 days. I know I know but it was phenomenal. Almost like rootbeer barrel for a moment before the hit of tart. So so good.

The floral soapy flavor comes from powdered sugar not being pure sugar. Some powdered sugar has tapioca in it. That’s what causes it.
