I just made candied cranberries yesterday. I did the boiled simple syrup version. Plus I tried both powdered sugar and granulated sugar. The taste from the powdered sugar can give off the floral soapy taste. I did not like that at all. The cranberries using the granulated sugar don’t have that weird soapy flavor at all. Plus after keeping them in the fridge for a couple hours, they tasted even better and more of them firmed up so they popped better. Now I have them in the freezer so I will see how that goes.😊

I can't imagine cranberries soaking up much of the juice when their skin isn't pierced at all. It seems more like dumping the cranberries directly into the powdered sugar brings along some residual juice, and you're tasting that. Which would make sense if the difference between the soaked and non-soaked orange ones is negligible.
I'm from Belarus, and sugar-coated cranberries are considered some of our most well-known national sweets. They are often used a souvenir and are available in most big stores. Traditionally, they only include powdered sugar and starch!

I've been making these for years for any get-togethers not just around the holidays whenever I can get the fresh cranberries. I've used ginger ale, but my son's favorite is made with cherry 7-Up. I have, and the weight increase was minuscule at best, basically just the amount of liquid that clung to the exterior of them. Both times I made them I only soaked them for about 10-12 hrs tho, maybe 24hrs is better 🤷🏼♀️
Cranberries have a very tough outer skin, which helps preserve the pop from the air trapped inside. You'd have to puncture that skin to get liquid inside the actual cranberry and if you did that I don't think it would cook or eat the same.

So, yes, it would take away the popping if liquid was boiled inside by the oven method. Similarly, ice would form inside by the freezer method effecting the pop. However, puncturing it and a 15 min soak and instant coating you would get a pop just not as crackling.

I soaked white grapes (smaller ones are best) in Prosecco overnight then coated them in granulated sugar and put on a sheet pan and froze them. They were pretty good. I have a big party to go to this coming Sunday to end the year. I may just take these just for the fun of it. It looks like I can make them in a hurry, and have enough for 50 to 75 people without breaking the bank totally. They looked very festive in a candy dish on our appetizer table. I know they made it into leftover bags of multiple guests Christmas night lol
So I did this the week after Thanksgiving because cranberries were on sale and I already had orange juice and powdered sugar. I washed my cranberries well, inspected them to remove and soft or shriveled ones, put them in a bag with about a tablespoon of orange juice, let them sit for around 10 min, drained the OJ, added a few cups of powdered sugar, tossed to coat then baked. They came out fantastic. Good crunch and a tiny bit of orange flavor from the juice. I will say sometimes you'll run across a very floral tasting cranberry which can read as soapy to a palate that isn't accustomed to floral flavors. Overall it's a pretty inexpensive, delicious, and healthy snack. Just got to the part where Emmy commented on the floral taste, lol.

I made the Prosecco and orange juice variety…it soaked for48 hrs as I forgot about them…I drained them, added icing sugar to the container and shook…then onto a sheet tray and in the oven at 200 for 6-8 or ten minutes …then 12 hours in the fridge…everyone loved them…even the pickiest people..I brought regular cranberries to have people test after and there were alot of sour faces! So this recipe was a huge hit…I had to make three more bags. A tip is to sprinkle icing sugar lightly over the ones that may look bare after putting them on a sheet tray and then put them in the oven. If a few pop a bit in the oven repeat with a sprinkle of icing sugar to those and put them in the fridge. Also they can be eaten within 6-10 hrs if you like. They are great!

I made candied cranberries almost by accident this year. Or rather, I was making candied peel and went... I bet these cranberries would be awesome this way -- and they are! Though my result was more like candied cherries. I wouldn't call the recipe in the video candied cranberries personally but such things are fluid, and they are, indeed a candy made from cranberries. (My method involved macerating the cranberries in granulated sugar overnight, then in a thick syrup at ~170F for 3-6 hours.)
Another way to make candied cranberries is to add cranberries to warm sugar water, cook for one minute, then remove them from heat to a rack to dry. Once dry, they will have a slightly sticky coating and can be rolled in granulated sugar and served as is with no baking. They are delicious!
I have cranberries i lacto fermented with clove, cinnamon, ginger, and Nutmeg. I think they would be a nice version of this. I'm gonna try it but with a recipe I saw using simple syrup.
I think I would try this with one change. I would make an orange juice syrup, cool it, and then toss the cranberries in them, not soaking them at all. I bet that would be good. The original way looks good too, but I agree that the 12 hour soak is probably a waste.
I always make my cranberry sauce with orange juice. Not a big Proseco drinker though, so I think if I try this, I will do it with an OJ and Sprite combo.
I was thinking about using a sparkling blood orange drink (non-alcoholic) that our local store sells and how it might be an interesting version to try.
They’re amazing, but the overnight soak is absolutely useless. I did a before and after, and comparison against dry. Wash them, drain them, toss them in sugar.
Pretaste comment. I expect these to be amazingly perfect!! I’ve found that cooking with cranberries sans sugar they’re amazing and lose a lot of that acrid tartness. Savory dishes of late. i have not tried these; but if I wanted to elevate the orange flavor, I would add finely grated orange zest to the powdered sugar.also I probably add a bit of vanilla in the soak.

We made these but didn't get the pop. I think the cran berries we get in Hawaii were not as fresh as yours. Sad. We will try again next year. We made a cranberry fluff with fresh cranberries and we found the cranberries to be very floral tasting as well.
Cranberrys taste the best if you leave them on the bush over winter n then pick them. Here they grow alongside the bogs edges on bushes and on these bogs the cranes live when they are here on spring and summer. Much love from north of Sweden.
I had fun making these. I soaked ours in orange juice and sprite. I definitely tasted the orange juice. The acidity of the orange juice compliments the bitterness. My kids enjoyed these as well.
You have to poke a hole with needle in each cranberry. To soak in the liquid of choice. Then roll in the sugar and then dry in the oven. If you don’t poke the flavour won’t soak in.

The scientist in me wanted more variables controlled! First - like with fermentation, I wanted you to weigh down the cranberries in the overnight soaks. I also thought - what if you vacuum sealed them forcing the liquid into them as much as possible. I didn’t want the same bag of sugar to be used for each trial. Cross contamination of the flavors!!!! Why didn’t you try sprite and orange juice for the non-alcoholic version of bubbly+orange!? I will stop here. All that being said - thank you for sharing this. I don’t TikTok - so this was new to me. I also eat cranberries out of the bag. Love the tart crunch. Last thing - it takes 18 months for a cranberry to grow. That’s a heck of a commitment from the cranberry farmers!!!

We made em, they were like explosions of tart candy with a sweet coating that did not provide too much sweetness. Super good right out the oven.

I think I would try this with one change. I would make an orange juice syrup, cool it, and then toss the cranberries in them, not soaking them at all. I bet that would be good. The original way looks good too, but I agree that the 12 hour soak is probably a waste.
I always make my cranberry sauce with orange juice. Not a big Proseco drinker though, so I think if I try this, I will do it with an OJ and Sprite combo.
I was thinking about using a sparkling blood orange drink (non-alcoholic) that our local store sells and how it might be an interesting version to try.
They’re amazing, but the overnight soak is absolutely useless. I did a before and after, and comparison against dry. Wash them, drain them, toss them in sugar.

i have not tried these; but if I wanted to elevate the orange flavor, I would add finely grated orange zest to the powdered sugar.also I probably add a bit of vanilla in the soak.
I wouldn't do the vanilla. I don't think the flavors are complimentary.

For personal enjoyment, I just add date paste to chopped cranberries until they taste good. It tastes good to me.
We made these but didn't get the pop. I think the cran berries we get in Hawaii were not as fresh as yours. Sad. We will try again next year. We made a cranberry fluff with fresh cranberries and we found the cranberries to be very floral tasting as well.
Cranberrys taste the best if you leave them on the bush over winter n then pick them. Here they grow alongside the bogs edges on bushes and on these bogs the cranes live when they are here on spring and summer. Much love from north of Sweden.
From the original recipe you were supposed to put them in the freezer or fridge for another couple hours so maybe that would make the pop stronger.
I had fun making these. I soaked ours in orange juice and sprite. I definitely tasted the orange juice. The acidity of the orange juice compliments the bitterness.
My kids enjoyed these as well.

You have to poke a hole with needle in each cranberry. To soak in the liquid of choice. Then roll in the sugar and then dry in the oven. If you don’t poke the flavour won’t soak in.

I searched for "benefits of Cranberries" on google and the next minute I get offered this video. Its like magic🙂I bought some cranberries and boy are they sour/bitter - its hard work -I am mixing them with Ksylitol (as they say A Spoonful of Ksylitol....)

The scientist in me wanted more variables controlled! First - like with fermentation, I wanted you to weigh down the cranberries in the overnight soaks. I also thought - what if you vacuum sealed them forcing the liquid into them as much as possible.
I didn’t want the same bag of sugar to be used for each trial. Cross contamination of the flavors!!!!
Why didn’t you try sprite and orange juice for the non-alcoholic version of bubbly+orange!?

Last thing - it takes 18 months for a cranberry to grow. That’s a heck of a commitment from the cranberry farmers!!!
