The thing is there is folk music in India which also varies according to region with different flavors to each of them, and then there is Indian classical music which is different from Western classical music! That last part is called a sargam in Indian classical. Arijitsingh is also a classically trained singer. Check out the following songs to check his classical side... Laal ishq, Ayaat, Binte dil, Phir le aya dil, Sajde etc.

Its Ragas are namely "Sa Re Ga Ma Pa Dha Ni" as Indian version, which is same as "Do Re Mi Fa So La Ti" in western classical notes... Singers in India have to go through these ragas over n over n over till they master it... There are other examples of the use of Ragas... You guys should react to "Chaap tilak" (by Abeeda Parveen and Rahat) and "Exquisite Afternoon Raag Bhimpalashi"(by Kaushiki Chakraborty)
You should check out "The Sounds of Nation" by Amit Trivedi (Composer) You will listen to different types of music and languages state to state and this performance was done by making all the sounds only through mouth!! You were saying for that performance that "they are making such sounds from mouth that they don't even need the instruments" They have literally already done that You both will love this one it was amazing!
The sargam you saw in shreya and arijit singh come from different "raag"s. These sargams are the heart of raags. Sargam is just collection of different notes that we use to train our voice to hone it to perfection.
Mahesh Kale, Aruni Kirani. That's classical for masses. Kaushiki Chakraborty, Darbarfestival. That's classical for classical folks. And mind you there is Hindustani, Carnatic, etc .. segregation in classical as well. Then there is folk music, as there are people with different ethnic background, culture and regions, thus came up with their own different major instruments, and kind of sounds that's prevalent in their particular folk music. Then there is mainstream cinema music, which again, are in multiple languages and thus multiple industries. They present a blend of all these music with western touch. And don't worry about not knowing Indian music, it is enormous, even for us. Just enjoy, we love your commentary.

He's blending Alt. Rock with the guitar and the drums with classical Hindi. The sitar towards the middle of the track is a popular Hindi instrument and the singing style towards the end. Arijit is one of a kind and one of the best things to come out of India.
You guys would get an inkling of south indian folk music of you hear the song called "sojugada sooju mallige" by Ananya Bhat. Trust me it's nothing like the Bollywood songs that you've been reacting to till now.
