Scalloped oysters are a recipe that was passed down by my great-grandmother. They are delicious--beyond belief. I omit the cream and use evaporated milk. I also juice 1/2 of a lemon, and divide a small amount of lemon juice over the oysters.
Chef, you are an inspiration!! I made this today but with a layer of spinach, onion, garlic, and Parm. I call it Oysters Rockefeller casserole!! A used Panko bread crumbs instead of saltines because I had no saltines. Still came out good. Thank you for all you do!!
@foodwishes Be honest John. People who love fresh oysters know you don't do that sort of stuff to them... sacrilege! This is what jarred oysters and canned oysters are for. Thanks for this...my mom used to make something similar as a Turkey stuffing... This looks terrific...gonna give it go for Christmas.
Apart from the cream this is almost exactly like the scalloped oysters I made a few years ago. I just may have to do it again. Those looked sooooo good.

FYI: milk works just fine if you have no cream. I couldn't find his recipe on the blog, and I didn't have my Grandma Roberta's. So I guessed and it came out PERFECT. 2 sleeves saltines 2 sticks butter 3 pints oysters (on the grocery fridge section) Black pepper Milk (I had skim, which is why I used 2 sticks of butter) For the instructions, mind Chef John. It was fabulous!!

You can buy jarred Washington oysters at Costco when they are in season. They are fresh, so be sure to use them as soon as possible. I would use a thin béchamel sauce instead of cream in this dish.
My mother is also doing something like this, but instead of that cream and oysters she's using cheese and broccoli... It's kinda like the vegetarian version of this and it's delicious, even though I dont like broccoli ^^ But except the 2 other ingredients it's made (almost) 100%ly the same way... Delicious ^^

I tried your recipe it's good but what I have found try with cornbread crumbled up instead of the saltines crackers its make this dish much sweeter and really good thanks for putting this up I am an old navy cook but I learn a lot of net dishes from you
I jimmied this recipe and made combined it with a recipe for something similar dish that calls for a lot of corn, more so then bread crums. What I made was somewhere inbetween was fantastic.
The canned oysters that we get here are very small and only smoked in oil. We have fresh oysters which are bred at the coast, but what liquid do I use with fresh oysters? CanI use some white wine, not too much though? How would it taste if sprincled with a little cheese before baking?
