This sandwich had absolutely no right to be as good as it was. One of the best sandwiches I’ve ever eaten.
I used to work at a restaurant where I had to make garlic confit the same way. When the garlic was soft we'd bread and fry each clove to garnish Ceasar salad with instead of croutons
That garlic chili puree, and the resulting garlic olive oil are now a staple in my kitchen
That garlic confit spread looks amazing. Definitely going to try this one! These videos are great, one of the best food channels on RUclips right now.
So true and in fact, all of my favourite yt cooks are Italian (also Chef John at Food Wishes) but Stephen is definitely the most creative and exciting.

For those of us who shy away from bread (carbs) and meat, this recipe would be great as a vegetarian meal. I especially love garlic confit and have made it lots of time, but not with calabrian chili. I'll definitely try that. I really love your recipes. Please keep it up. Thank you.
Just made this last night. I loved it, and my family & guest loved it. Things I oearned:
You cannot put too much broccolini in each sandwich. Pile it on until it falls out the sides!
The garlic confit was not garlicky enough for me as is in the recipe. An hour on low simmer really takes the edge off. So I just added a few cloves of raw garlic when I pureed it with an immersion blender. Very easy to increase the “bite” to whatever level you want that way
There are many ways I might modify this to make variations on the theme. Next time I will try substituting smoked mozarella and finely chopped sun-dried tomatoes for the prosciutto & sopressata in order to make aneatless version (I have vegetarian friends)
Now… what to do with the extra garlic confit? Maybe a dip for antipasto? Blend it with anchovies for a bagna cauda spread?

Fry eggplant with breadcrumbs into cutlets than add it to a slice of ham and provolone with garlic mayo add garlic powder to eggplant cutlets when out of frying
olive oil and tomatoe >? seems bad to me to mix tomatoes with cheese and with broccoli

The best thing about this channel is not the individual recipes, but the techniques. Use this condiment with that technique, and create a new recipe that expresses one's own cooking. Cause you don't just want to follow a recipe for one dish, you want to use these things to create new things too.

Used to eat a sandwich similar to this at an Italian restaurant i worked at. Focaccia bread, rapini sauteed in chili and garlic, sliced prosciutto with a Calabrian chili aioli. This brings back memories thank you.

This looks amazing! I imagine if you don’t eat pork or meat (or want to save a few bucks), you can swap it out and replace with a good pungent cheese. Maybe Swiss and/or provolone, also sliced thin. Such a creative sandwich!

@not another cooking show, made this for me and my daughter during the super bowl and we loved it! Thank you for the recipe!! We always have some broccolini in the fridge since it's our favorite green veggie. Riffed a little: used stirato and fresh mozzarella instead of ciabatta and ricotta. Will make again (and again) for sure!

@@doursen Excactly what I've experienced. I'm from Switzerland and generally love myo. But then I did a 3 month trip to the USA in 2017. When I first bought some mayo I was shocked by how bad it was. I thought it was just this particular brand of mayo, but when I tried two other ones, they were equally bad.
Tl;dr US mayo sucks major ass, european mayo is amazing.

A trick we like to do in the industry, is to bring the rubber band to the end of the stalks. That way, when you chop the ends, the rubber band holds all of them for easy clean up.

I've been enjoying this channel for a while, but this is the first recipe I've tried to make (sort of). I omitted the meat and made a few substitutions: Tuscan kale, Mama Lil's pickled Hungarian chilis, and sliced Manchego. Very tasty! Thanks for the inspiration!
I do my garlic in the oven but it comes out pretty much the same as yours. It's just the way I have been doing it for years. You can pair that soft sweet garlic with pretty much anything and I will eat it. As an old Italian guy from central Jersey, I am a fan of most of the things you make.
You gotta try the method with cloves on the stove in oil. I started doing it maybe 6 months ago and it’s the best because you get that flavored oil to use as a bonus! I love using it in salad dressings

Made this for the second time tonight, it slams. Last time I thought the prosciutto and soppressata were a little too funky and overpowered some of the other flavors, so I swapped it for mortadella and finocchiona this time. Chef's kiss to the high heavens
I would love to see a video on how your store your ingredients - for example the garlic oil you made, How did you store it when cooled? How long does it last? I always find some people are so vague about storage and how long things last. (there are no good videos that I have found)
