It wasn't just his roles that changed after 2000s. Bollywood never used to make different movies before the 2000s except for art movies. All the mainstream movies were identical love stories with lots of songs up to the 90s. But he took the lead in making story based movies

Lots ..his initial movies were with Juhi Chawla..it was a successful onscreen pair just like Srkajol..I loved Aamir Khan the most with Juhi..he just gelled with her onscreen like magic n second pair is Aamir and Madhuri..I dunno why they never worked later on..cos that was another awesome pair
Aamir and Juhi had 7 films together and 1 film where Juhi played a special appearance which was Andaz Apna Apna. Aamir and Juhi is my favourite onscreen pairing. I like SRK and Kajol but I prefer AamirJuhi as they have better visuals. Aamir and Juhi are MAGICAL together. I hope they will do more movies together.
He stopped working with Juhi Chawla cos she refused to work with him due to his pranking nature. I read in a magazine back then where she said that one of his pranks went too far on set that made her almost cry so she refused to work with Aamir Khan in future and after that both of them never got the chance to say sorry or confront about it n never got the chance to atleast save their friendship.

You should watch Aamir Khan in ‘1947-Earth’ (1999). This movie was *the* turning point in Aamir Khan’s career because he worked in sync sound for the first time. He sang the praises of director Deepa Mehta in every interview from that period and refused to work without sync sound since then. Lagaan, Dil Chaata Hai, RDB, all followed soon. I believe Lagaan was even delayed because of his new found love for sync sound. The movie was one of a trilogy from Indo- Canadian director Deepa Mehta (Earth, Fire, Water). ‘Water’ featuring John Abraham was nominated for an Oscar.

The storyline, the execution, directing, the songs, natural acting and especially Aamir and Juhi's magical chemistry will really make you fall in love with the movie.
