I sit down press record play the piano and if I like what I played I save it as a midi. I edit the midi if i need to before exporting the audio through the piano. I use the PianoVFX visualizer for the falling notes cause it's free and it looks good. I then put everything in Sony Vegas, sync it, apply effects like color correction and reverb and render it.
