Great recipe! One thing I do when preparing the cucumber? After I grate it, I'll add some Kosher salt to draw out the water. After letting it sit in the fridge for around 30 minutes, I strain it in the towel (as you did). Thanks!
Looks fabulous, Greg. I never considered making one at home because we have a local place 600 feet away that serves excellent Gyros. The thing is, prices are becoming more and more ridiculous these days and man can not live on burgers alone! Thanks for this one!
Thank you so much for this video! I had the same idea of making it on a flat top as smash burgers and slicing it the way you did, but I was intimidated to try it out of fear that it wouldn't work. I will definitely do this!!!!
Great idea. I always bake mine but this looks way easier and better. Also, pitas are super easy to make, probably the easiest bread to do at home and they taste fantastic.

I've tried making this so many times and it never tastes right. Never thought of cooking it smashburger style. If this works then you're my new hero. Good job.
I do these a couple three times a month. Usually in the oven in loaf form, but will definitely be doing it on the Blackstone at the cabin this summer (maybe even a riff on my smash tacos). I like 100% lamb (Impossible burger for my veg-head wife). My son can't stand store-bought pita and insists I make it (same goes for bagels, and we live in NY). I like sliced cucumber in the tzatziki and blend some onion with the garlic in the Ninja smoothie jar.
Hey Greg, I am a Gyros addict and I never thought of like the cheat method you had used. Personally, when it comes to Gyros, I have good browned meat on a skewer in mind. You have a great flat top, I would use thinly sliced meat, marinade them overnight, then slice them into smaller strips, not too long and roast them with very high heat on your flat top. Season with salt a few Greek herbs at the end, and voilà, there you have it. How would you make a Döner Kebab without meat on a big skewer? This calls more like the approach you've been for the Gyros. Mhhh yours looked delicious regardless.
My man, you gotta try a batch with the mint! Just make sure to use regular mint and not spearmint. I also leave the cucumber water in, made it both ways and leaving it makes it less thick and adds flavor. Great cook, I will be making mind this way going forward. Brilliant idea with the smashburger. Can you explain what the food processor does? And squeezing out the onion? Just curious!

Great episode!!! Looks like the perfect homemade Gyro and crazy simple!!! This style of food opens up all kinds of possibilities in the Mediterranean and Aegean region. Lebanese Shawarma and Turkish doner kebab round out this regional trifecta of deliciousness.
In Greek most of the time there will be some French fries on it as well. And the pita traditionally will be warmed by laying it over the cooking meat with 1 side. Then you would have a perfect Souvlaki. Which is what you make, not a gyro :-)
