Learn to make this Trinidadian favorite that's simply irresistible. This recipe for Trinidadian bhagi uses simple ingredients including chopped spinach, cumin and coconut cream. This recipe is traditionally made with Dasheen bush leaves(taro) or chowrai bhagi, however those are not readily available in NY where we live, instead we are using frozen chopped spinach, which is equally as delicious and more convenient.
Enjoyed with dhal and rice or sada and dosti roti, it is one of my absolute favorites. After 9 years of blogging , I am happy to finally share this recipe with you.

I remember as a little girl in Tunapuna eating Bhagi that my grandmother made and relishing the smell and then the taste as it melted in my mouth with her roti! Such wonder memories. Thank you for this recipe! Like you I’ve been trying to simulate the texture and flavour. My grandmother also made the best stewed beef and eggplant Oh! It was so delicious. I’ve made several attempts to make it like hers but it never comes out the same. It would be great to see your take on a stew beef and eggplant recipe. I got bhaji in Canada..it is known as amaranth. I don't know if you would get it on Liberty Avenue. I love bhaji..any kind. Without fail it is the vegetable that I must buy every week..whether it is chorai..dasheen leaves..poi or pakchoy. You made me drool with your finished plate. Great job as always👌👌👌

I've made bhaji with chopped spinach and with baby spinach. Both tastes equally good, but it's just that the baby spinach takes a little bit longer to "cook down."

Can you substitute the creamed coconut with canned coconut milk? If so, how much? About half a standard can?
Yes I would use 1/2 can-don’t want to overpower the taste of the spinach.

2 teaspoons of salt in that small dish of spinach?
1. Wasn’t table salt- which is stronger
2. A cook always has the option and freedom to add salt to taste.
