Did you use basmati rice for this? If yes, do you have some tips on how to prevent the rice from being too 'fluffy'? I'm a Jasmine rice person but I've never been able to get basmati to work for me. I've tried both American and Indian directions on how to make it, but the mouth feel of the rice is always very light, too light in fact. It's almost like eating air. I've noticed that when I see Nigerian recipe videos using basmati rice it doesn't look excessively fluffy, it just looks like regular long grain rice. How do you do it? I've started to wonder if they export a different type of basmati to Nigeria? Any tips or advice you can give would be greatly appreciated!
I’m not sure I completely understand what you mean but I use Sella Basmati which is different from regular Basmati. The grains are firmer and so don’t get as mushy as regular basmati rice. Because it is the parboiled version I only soak it in hot water for 10 minutes before cooking it fully. So if I was making Jollof rice, I would measure the rice, pour some hot water over it for 10 minutes, rinse and pour it in the stew base. If I’m cooking white rice it’s the same process, soak, rinse, salt and finish cooking. I hope this helps.

Thanks for the recipe. Is the coconut milk just the normal liquid from coconut or is there any extra think added to it? The powder too
Nothing extra added to the coconut milk but I used the one in the can which is usually thicker than blending coconuts and getting the milk out

Yes you can dilute it and sub for Coconut Milk although the Coconut flavor may no longer be intense

No, there's no need. Unless you have them and want to use them otherwise you can use just coconut milk and coconut powder.
