Hello ! I really must congratulate and thank you for sharing your recipe and technique. Its simply amazing and gives a lot of inspiration for us to try at home.
A fear I've personally had is cooking the meat in the fashion you do....worrying that the rice would get severely overcooked by the time the meat gets cooked.
I will however try your method. Could you share with me :
    1. The timing of cooking on the stove and then what is next ?
    2. The weight you have put on top of the cover.
    3. You must teach us your special Hyderabadi Garam Masala recipe....knowledge is meant to be shared...many of us may never get the opportunity to eat from your delightful restaurant
Thank you once again. Look forward to hearing from you.

I was watching this video, which was really excellent, especially as I enjoy doing handi cooking and I really enjoyed Hyderabadi biryani , as a child, when I stayed there for five years. It was very delicious, and got me knowing about the cuisines of all the places to which we were transferred, all over the country, North, East, West, South.
I was also reading the comments of a large number of people here. The ignorant and illiterate were of course showing their superior upbringing and class by using insulting words and names. This is the only way in which they can get some sort of attention, poor slobs.
I have noticed ladies in the West , cooking in their kitchens without gloves, and some of them had really long nails like claws. Funny, nobody bothered about hygiene/gloves/how clean your hand is before they do any mixing and all that idiotic smug superior, jazz. Many of them do not even bother washing their hands, before they begin to do any cooking. When will human beings stop being ridiculously superior critical hypocrites, looking at the mote in somebody else's eye and shrieking all over it, when there is a log in their own eye?
I have been to 35 countries, and I have never suffered from any sort of stomach upset, through eating in restaurants like this one and Street food,] much more delicious than three pieces of carrot, decorated with one piece of cucumber and some pieces of boiled potatoes with a white sauce on it, so what do I do with those two mouthfuls, in the name of gourmet cooking and exorbitantly priced? What a joke! French cuisine, Oooh la la la! ]
Also, the moment I went for an official formal dinner in a very well-known five-star hotel, - country unnamed, Western - I came down with a very bad case of salmonella. The medical expenses themselves wiped out my credit card. So do not you talk to me about hygiene/ingredients/cooks wearing gloves and cooking practices which nearly killed me, thanks to you super antiseptic, hygienic and clean , chemically inundated preparatory areas.
If it is too hot in the kitchen, get out of it. In the same way, if you do not like this video, go watch SpongeBob or friends or 15 cooking hacks on RUclips. You would not be able to appreciate real authentic original traditional cuisine if it came and kicked you on your perpetually anorexic and bulimic dieting posteriors.
