    Looks kind of like my Hunt Soup. That's where you Hunt around in the fridge and freezer then throw it in the pot, cook it up and call it dinner.

    You don't need to call it a recipe. You're really cooking / preparing your food from scratch.... Sometimes when I watch a cooking program on tv (which is rarely).....by the time the food is altered, colored and such dramatic presentations ..... I call what they are doing "playing with food"...the best food is fresh, simple and unaltered in unhealthy wayz...this looks so good!

    Actually cooking rice is easy if you measure your rice n measure your water in the same cup...one cup of rice n two cup of water..thats the mesurement.

    Collette, apples here (USA) large, bulk are about $1/ea. Not organic either. I love apples, but I usually buy only 1 or so. Sometimes I get a bag of 3 that are marked down. I love making soup/stew and it's hot, warming, and usually lasts two or three days so I can have "left overs". That way I don't have to cook every day. Yay!     We have Braeburns here in California. I enjoy slicing and grilling them with a few grilled cranberries (just until they pop and before they get too gooey). Top with crème fraîche or sour cream for the non-vegans. When you slice an apple across its core, there is always a 5-pointed star inside. You can grill it like that for a pretty presentation, or core it and place the cranberry inside.

    Your dish looks tasty and lovely. I live in California and we have an abundance of fresh veggies and fruits but unlike Europe most of ours are GMO unless we pay more and buy certified organic and non gmo. The Braeburn apples look delicious. You have such a cute place. Makes me want to join for dinner and sit by a fire with a book cozy up to Jack. Beautiful gift from Melanie. Love teas.

    Those frozen spinach 'bullets' are a wonderful freezer standby as you can add them to all sorts of dishes and keep up the amount of vegetables in your daily diet. I add some to all my bolognese sauces and shepherds pies, pasta bakes and rice dishes. I love your single induction hob btw - so handy and energy efficient.
    I agree about the spices - they do last for ages - the trick is to store them away from direct heat and out of direct light. Tucked away in a basket like yours, or in a cupboard is fine. Sell-by and use-by dates on foods can be very misleading, and are only guidelines. The only ones I really take notice of are those on sensitive foods such as cooked or prepared meats, fish & shellfish, chicken, pork and sausage. For the rest I rely on my nose and common sense.     It’s interesting how our knowledge of nutrition has increased so we really can shop and cook with great discernment and a great deal of joy. I love all the different styles of food available these days and the ingredients. I hope that’s a major part of education at home and in schools. You are what you eat. I’m type 2 diabetic and I know why and what to do to keep it in check. Your plant based diet and hard work is the key. I have to walk as much as I can. Good long walks.

    Love all your videos. Lazy Sat here in Virginia USA. Organic here is very expensive. I buy all produce organic and it’s expensive Colette. My dream is to own land and grow my own.. Delicious dinner.😘

    Here in Vermont I pay about $1.00 a piece for organic apples in supermarket. We have apple trees so we eat those first and go to pick your own organic orchards for keepers I can keep in root cellar for a few months. I freeze apple slices for baking and smoothies and make applesauce and apple butter w/ our apples too. I only buy supermarket organic apples mid winter occasionally as they are so expensive! Our dogs love apples too! They eat a lot of the drops! Love hearing Jack talk!

      Colette I made it, it was delish! I made enough for two nights dinner(would have been 3 dinners if I hadn’t had seconds😳). Simple but hearty and I’ll be adding it to my repertoire for sure..🙏🏻

    In Cyprus that way of cooking rice with liquid and other ingredients would be called pilaffi, looks very nice.

    This sounds and looks glorious! I agree, the expiration dates on spices aren't necessary. One can always open the bottle and test/taste the spice.

    I think that as apples grow well in our climate I would choose to buy as local as possible, in the UK they are plentiful at the moment and delicious.

    I call this Pantry cooking, I love to make rice dishes like yours but I turn it down and put a lid on it......yummy!

      heather foley I do too. The lid intensivies the heat and the rice cooks up nice and takes up the excess water. But as many ways as there are cooks. It all tastes good when the ingredients are good. This looks yum,

      You could sub red lentils for the brown rice and then add a can of coconut milk. And then eat it over rice!

    Now that's my kind of food. Your collection of spices is rather like mine too....including some of them being old! I think it's because we grew up in the days before sell by dates, when we used our senses (including common sense) to see if it smelled, looked or tasted off before using. I knew there were advantages to becoming more mature ;-) !!

    Been cooking since I was 9 yrs old. Went on to manage 4 restaurants over 14 years. I call it eye-balling. Never measured. Never really needed a cookbook. 🥰Looks wonderful.

    Thank you Colette for the inspiration! I love one pot dishes and using Indian (India) spices. My boss is Pakistani. His wife has invited us over for cooking class. Nothing like food to bring the world together. As for the apples, the only organic options are Gala and Honeycrisp. Sold individually by the pound at $3.99 and 4.99 respectively. Lovely gifts!
