It depends on which country you are from and what part of the country. Northerneastern/North central Mexican and TexMex and New Mexican foods are really hot. Food south of that generally isn't very hot or hot at all. Central American, for instance? Not hot. And New Mexican is the hottest of all.

That's kinda the side effect of the whole "melting pot" thing in America. American people identify so much with the culture of their ancestors that they forget their culture is actually American.
This means that they see culture from the point of view of an American, with all of the stereotypes associated to it, and use it as a prop, since they are the center of the world. Being the center of the world and using foreigners as a prop are, ironically, the most American things one could do (I know I'm being a bit harsh and a bit unfair, but it's a huge part of America's image to the world throughout history and media).
It's a circle that can't be escaped: the United States is basically denying to have a culture in favour of what it thinks is the cultures of its inhabitants' ancestors, which is an American re-arrangement that comes off as a parody.
That is quite evident to me as I'm a foreigner and most of our traditions are skewed beyond belief.
