Hi Rocky that hassa you call them smoke hassa you cut the head off and throw it out . Regular is good. Then there is another one you call flat head . You peel the skin out and cook the hassa . Where you from in Guyana you call them different names . But they are all good to eat . The small hassa is very sweet .
