Our weekly newsletter is all about what it is like to run our coffee business. And don't worry - we are not trying to sell you anything - it is just another outlet for us to share some fun stories and things that are happening in our shops. :)
Welcome to "twenty twenty coffee" - our small coffee shop located on the west coast of Denmark.
Join us as we make few orders in our coffee shop. Today we are working together with my girlfriend in our coffee shop! It was a rainy day so all our customers were sitting inside and it was packed! Follow along as we serve our customers with some nice coffees, homemade cakes and delicious food. :)

Good question! That is because some from our team are internationals as well as many of our customers are international tourists. Therefore English makes the most sense. :))

i came across with your content in last days and really enjoyed and i got a quite well overview about how this business works. Additional to that I am just curious is there any specific reason of pouring the hot water on espresso shot instead of poring espresso on hot water for americano? If you pour espresso to the water then crema of the coffee can be seen better and first sip more tasteful. But since you are well planned and organized i thought maybe there is a reason.

Hi there! Thank you for watching - we are happy you found us! :))
Well, this is mostly a matter of habit - we don't think it has great affect on the final drink really. In our case we have several practical/workflow reasons why we do it this way:
Firstly it is much better workflow to just focus on making shots on the coffee machine - and then finish all the drinks later on the counter. It is just much smoother workflow that way. :)
Secondly, the machine is full of electronics - so it is important to avoid spilling water into the machine. So the idea of moving a cup full of hot water towards the machine just seems dangerous and unnecessary. :)
Lastly, not sure how deep is your understanding of coffee extractions - but it can happen that the shot intended for the americano isn't 100% - so not usable for americano but still very usable for a milk-based coffee drink. So then the skills of the barista is to keep an eye on the extractions and use the shots around as needed. And if the shot would be brewed "into water" in the first place - you can only discard it - not use it elsewhere. Hope this makes sense. :)))
