I used to think that piping the frosting in between the layers with a bag was unnecessary, but it really DOES help to spread a perfectly even level of frosting across the entire layer, rather than a mound of frosting accidentally in the middle and then not enough on the sides. It is a lot harder to eyeball than you would think!

I like to add some melted dark chocolate and some black coffee to this recipe and switch out the white sugar for half white half brown. Probably too decadent for some but I have no regrets, haha!

Was a bit worried because the cake does not contain real chocolate but it came out perfect. No crumbling and breaking of the cake when levelling. Tried a similar recipe on youtube with real chocolate and what a waste of time and money
