- There’s a science to tenderizing meat - a process called velveting. We shared Daddy Lau’s velveting technique in the past using cornstarch, but how about with baking soda?

Another youtuber said first coat the meat with soda and then wash the powder off completely before marinating. In short, she said do not add soda to marinating sauces. Otherwise there would be a metallic aftertaste.
I learned the hard way. I tried the baking soda trick but didn't wash it after. It tasted really weird. I couldn't eat it.
This series is packed with great advice. I tried this one with excellent results that my flatmates raved about!
This is a common way to tenderize meat but I wouldn't suggest using it as it gives the finished dish an unpleasant and unnatural taste. Use starch instead if you don't mind the carb, or use cooking wine if carb is a concern.
wine has sugar, carbs and sugar are the same
Just don’t add too much baking soda or it’ll make the meat rubbery. You only really need a tiny amount.
corn starch alone works better
Who are you going to believe, a chef with 50+ years of experience or some other “loco yoko?” I’m going with Papa Lau every time. 😊
Don’t you need to wash the baking soda off before marinating? Thought you just use water 2 parts water 1 part baking soda and let it sit for 30 mins or so then wash it off then marinade. Baking soda will leave a bitter taste
Another youtuber also said first coat the meat with soda and then wash the powder off completely before marinating. In short, she said do not add soda to marinating sauces. Otherwise there would be a metallic aftertaste.
@@mtv565 that’s what I heard too

Thanks pops ❤
I love ur dad ❤
Ty for this
Oh wow... I didnt know about baking soda, I usually just use either honey or onion to tenderize meat, and it works as seasoning too 🤔 Gotta try with soda sometime
How do you use the honey and onion. I don't like the taste of baking soda ❤
@@geltermachona very simple just marinade the meat using these ingredients, you can also use kiwi and pineapples they also work as tenderizer. It all just depends on the flavor profile you want, oh and if u decide to use onion, make sure you squeeze it a bit so it lets the juice out, same for pineapple and kiwi, since its the juice that does its magic there ☺️

Can also use it cut down on the cooking time when you brown onions. Just be careful in how much you add.
How much do I use tho?
How much baking soda is needed per kilogram of meat?
The superchat overlays the translation.
SAMEE!!! Filipinos do this too!!
I took food science instead of chemistry in school.
Just reminded of all the things I learned
I wish i knew Cantonese. I speak mandarin and speak my provinces dialet but Cantonese didn't really stick to me. i love southern food because i try to avoid spicy northern food sometimes.
Absolutely
Hi, can i skip the wine when marinate it?
of course you can. Wine is adding another layer of flavour profile.
The language that this man is speaking is a typical traditional language spoken at south of China.
I have been using buldak packages because its got the seasoning packet for the oil and the sauce packet for the meat.
or just stirfry sauce on the veggies before adding the meat!
Would this work for stewing meats?
with meat that you would typically stew, its toughness will go away with the low and slow cooking process while for stir frying it should be more of a flash in the pan type thing. also for velveting, it tenderizes the surface of the meat which is good for a thin piece of meat, but not as effective for a larger stew cut
@@gcal8263 thank you so much! Very helpful
Why would you do that? For stews, the meat will break down after a few hours. If you don't have a few hours, you can use a pressure cooker to speed up the time.
@@gcal8263 ThankQ, that makes sense.
@@cyclopsvision6370 what if i dont have apressure cooker
how do you get rod of baking soda taste?
How much baking soda and for cornstarch per pound? I have 6lbs steaks.

Cant see the captions. Its under your subscription graphics. Every RUclipsr does this. They must never look at a RUclips video.
This is how I do with my veggies as well. Idk what is their name in english, but everytime I boil 'daun pepaya', I will add 1tbs of baking powder too to save time!

Does baking soda leaves a taste? Like bitter?
@@schoolaccount704 sometimes bro even in breads
Is it possible to have the amount of each please, I am worried the baking Skoda will make the meat taste nasty
my mon would put bakingsoda in to cabbage when cooking it but i do knot know why.
Can you use this on Octopus? Do you all have a recipe for Octopus?
A tenderiser wil help aswell, not a hammer!!
My dad told me this
I know RUclips likes shorts but if you could make regular videos of these sometimes it would be really help because then we can save them. To my knowledge, you can’t save shorts.
Just be aware not to add too much baking soda, or it will leave a bitter taste on the meat.
When I did it in the past, it ended up tasting bitter
could you use this method on bigger pieces of meat like a steak?
Certainly yes!
Does this work with pork
Indonesian vendor use paracetamol. cheap, effective, and cure fever
Baru denger cok,beneran??
Only use it If the person you are cooking for has a fever or wants his kidney destroyed by acid.
So this is the viral channel who beat his own dad when his dad tired to make video?
😉👌
buy, super, thanks are blocking instructions and amounts corn what??
Corn starch is the GOAT
soy is toxic. it's there a better recipe?
where the fuck did you hear that soy is toxic?
your dad's accent is same as your's 🤔
Can you do so with meat you grind for patties? Would you do so with the patties after they've been shaped or right after it has been minced?
Isn't ground beef already tender?
If the meet is already grinded, you don't need the baking soda. Just add the rest of ingredients, corn starch, soy sauce, water and oil, then you patties will be tender
If you can't chew through grounded up meat, you don't need baking soda, you need a dentist.
Baking soda is the most important part of this, almost everything else can be skipped or changed, but the baking soda has to stay.
I would recommend you add some to any meat marinade, what it does for meat is nothing short of amazing.
Nah, I usually just add corn starch and a little cooking oil. Works like a charm.

I no understand chinese
I have tried with Baking soda with pork, but the meat taste a bit strange. it feels like you are chewing a piece of rubber. what have I done wrong?
I tenderize pork choy or spare ribs with baking soda and a little water for about 20 min. Then rinse with cold water before I marinate with sauces. I don't use baking soda on anything else.
Only use a small amount like a teaspoon and i wash it off before I marinate 😊
