      Cooking With Ry I have a question . What can I use to keep the temperature probe in place on the grate of my Smoker ? I viewed a RUclips video and I can't tell if they stuck the probe in head of garlic or they used dough to hold it in place on the grate while the smoker is closed.

    My model is probably a bit older but helped me set a temp timer for smoking over night during the week. I cook a lot for my employees at work and this will be such a game changer!!! No more wasted meat and time. It’s so nice to know I can start after work the day before, keep a close eye on it with the spray and wood chips and after 4-5 just wait for the temp!!! Have 2 butts in now and finally I don’t have to set my cell alarm for every hour to get up and go look. Thanks brother!!!

    Thanks, Ry. That was straight forward and easy to understand. Your explanation was much better than the instruction manual. Although I just purchased the TO-08S, the buttons are basically the same as your model. I've did some technical writing in my day, mostly recipes, military manuals & kitchen policy documents. It's not always that easy to get an idea across in few words.

    Thanks so much! I’ve watched several videos on this digital thermometer and honestly yours is the only one I really understood. I’ve smoked with an electric smoker for years but I wore it out and my family got me a 24” smoke vault propane smoker for Father’s Day. The main reason I got this thermometer was to smoke jerky and didnt want to try too until I got a good thermometer so I could know my exact smoker temp at all times.

    Thank you Ry, read the manual and watched the video by Thermopro. However, your video is way easier to understand. I have the TP 20, but it does not have a low alarm; therefore, I got the TP 8S for slow and low smoking.

    So far I did everything you stated except checking the accuracy of thermpro. Was using quarter rounds of Cherry. I thought maybe the charcoal with not a lot of wood was the reason. Thank you for your input.

      The Longhorn is a bit bigger than my Highland. You might need a bit more wood. I find that once I have a good fire, maintaining it by keeping it fed with wood at the proper intervals and charcoal if necessary does the trick. :)

      Well with your advise, I think I know the reason for not being able to get the temp up. One my charcoal basket I believe is to small. It measures 12x12x6. I had it filled with white charcoal and a few chunks of wood and this was not enough to get the temp up. So, I added six 1/4 rounds of wood got them lit and the temp went up to 250 plus. I guess the size of my cooking chamber which measures 43 inches long needs lots of fuel to get it hot. I also, had a problem like you with the gasket material around the fire box. Not a very good product. I'm going to use the red gasket paste and see if that works better. Thank you again for your advice. Been a big help.

    Thanks for the video! I purchased this model and I've never used a digital thermometer like this before. Where should I place the pit thermometer in my Weber kettle? I'm going to try to smoke a brisket for the 4th of July and I want to make sure I use the pit thermometer correctly.

      I try to place it at least 10 inches away from any heat source.

    Thanks, the one thing now that I'm still a little confused on is how you use the pit probe. Do you just lay it on the grill grate next to the meat?

      There should be a clip that came with it to hold it just above the cooking grate.

    Hey Ry, Thanks for all of the videos. They are really helping me get to another level of grilling and BBQ. Do you still recommend the TP-08? I went to buy a wireless thermometer and was surprised to see so many models and brands getting bad reviews. They seem to fail a lot - in a lot of different ways. Any recommendations would def. be appreciated. Thanks again!

      Personally I like the ThermoWorks thermometers, but they are more expensive. I still have my TP08 and use it on my electric smokers frequently and it still works great ;)

I won't have the wireless set up, but I have a laser thermometer and an instant read - and the one on the kettle of course - so I'm sure that will get me through until the ThermoWorks arrives.       I believe the 08 allows you to set a high/low temp alert for the second probe. The 20 does not. The 20 is more designed for 2 meat temperatures. The 08 is more designed for a smoker.

    Ry, I have a 20 year old smoker that I just started to use again. It's a Longhorn by the way. I bought the ThermPro and the baffle plates for the smoker along with the water tray. My problem is I started using the charcoal basket with wood mixed in and for some unknown reason was unable to get the food pit up to the temp I wanted. Also, the temp guage on the smoker was a lot higher than the probe from the ThermoPro. Was wondering if you had any ideas since you seem to have the same set-up

      A vintage Longhorn. Nice! A couple thoughts--if you haven't yet, verify that your ThermoPro is accurate (it probably is). I did a video on that here: ruclips.net/video/IqpUKUVWDS0/видео.html Next, if the smoker has been sitting for a long time, make sure that the smokestack hasn't developed any obstructions (critter nests, etc...). When I start a fire, I usually pour a full chimney of lit charcoal in the firebox and then add one piece (usually a quarter round maybe 12-14 inches long). I have the smokestack fully open, and I leave my firebox side door open, not just the damper, and I also leave the firebox top door open until good flames develop. Then I close the top door, but not all the way--I usually prop it open about an inch using an old pair of tongs. At this time I make sure the damper is fully open on the side door and push the side door in so it's at about 45 degrees open. By this time my temp in the cook chamber is usually nearing where I want it. If I can see good flame through the slightly cracked firebox top door, then I remove the tongs and let it close. If not, I leave it that way for better airflow. Some pieces of wood are better than others--more seasoned, drier, etc... If you're using smaller pieces of wood, you may need to use more, and I frequently will add additional charcoal if I need to bump the heat up for longer cooks. Hope this helps!

    A lot of reviews complain that there's only a way to go up when adjusting temp presets so if they accidentally set it to 276 and they wanted 275 they would have to cycle all the way through again. Maybe they should watch your video!

    Im a little confused. I bought one and it says to keep the wires away from open flame. I'm pretty sure that a steak will cause some flare ups. How am I supposed to keep the wires away from open flame? I'm worried they'll burn. If I put the probe into the top of the steak then I won't be able to flip the meat as I'm cooking.

      I haven't had any issues with a quick flareup, but I wouldn't run the wires directly over an intense heat source. I use this mostly for indirect cooking.

    Ry, do you still use this thermometer? I think I have a newer version of it mine is identical. But I’ll tell ya 9 times out of 10 I get this vibe that both probes are not giving the correct temps. Where should the probe be in the Weber? (I do have a slow n sear). Any tips are great

      No, I use ThermoWorks thermometers now. Costs more but they work flawlessly for me.

      @@Southjerseysmokin Not junk. The ThermoWorks are just better built and work better in my opinion. I like to put the probe opposite the fire when possible.

    How long do batteries last?

      I replaced mine after 8 months the first time, and I used it A LOT :)
