I bet you can take the canning liquid, boil it down on the stove to thicken and concentrate it, and pour it over the carrots to serve. What a great recipe. Thanks for this video!

hi great video (as always) i am from the Netherlands and canning is not common here, during the pandemic i found your channel, and you inspired me to start canning, so after watching your review i bought an Instant pot max (had to import it from the states since it is not sold here) and i absolutely love it, i canned meat, vegetables and soups and so on. now i hear you mention in this video at timestamp 08:43 while programming the max that you have no control over the keep warm function, but that is not the case, you can turn it off by touching it, i always do that to let the max cool down naturally, i do not want it to keep warm because it takes so much longer to cool down when the option is turned on. i hope that this little tip is helpful. and can not wait to see the next video. stay safe and healthy. kind regards. Oh, I love it! I was looking at this page in the cookbook this morning. I'm canning beef stew today, and planning to do some of the potatoes on that set of pages a bit later. My son had made the mediterranean and herbed potatoes a while back, and they just looked awful. I couldn't bring myself to use them, or to toss them. Watched your using canned potatoes video, and turned them into soup. A-maze-ing. So I am making more. And after watching this, I am going to can whatever carrots I have left after doing the stew. Because these look fabulous too. Oh, and my son did the same thing with measuring out the ingredients and putting them into the individual jars. So much easier that way!!
I am so excited to try this! The instructions to my Nesco said to unplug it when it ends and leave it alone for an hour. Then you can open the lid. I wondered about adding the extra jar to make four and have been making sterilized water I don't need, thank you for showing the "dummy jar". I live in SW Florida and we have the exact different problem as you all with weather. It's 84 degrees and humid today, very very warm for this time of year. I'm canning now for meals when it's super super hot and humid, not there yet. I appreciate your videos, thank you
The sterilized water in the dummy jar wouldn't necessarily be a waste, especially in Florida. If you had it put aside, it could come in handy if you had a hurricane that caused a power outage or ever had "boil water" orders for any reason.

She said that her jars take up the same amount of space empty or full, so she might just as well have water stored in them as to leave them sitting empty, and she'd just empty them out as needed. I think she used her previously used lids since she wasn't concerned about food spoilage, and it was only water in the jars. I think the RUclips channel is "Her Homestead Skills."

I’m always surprised at how much more appealing a new recipe becomes when I see it, as opposed to just flipping through a book. I have been through that very Ball book SO MANY times, and in fact it’s got lots of bookmarked pages etc and yet not once did that recipe ever stick out to me as one to try. I tried for the first time to grow carrots in the fall and was very successful. They are a variety that stores well and they are in my refrigerator. My spring carrots are frozen and canned. We are excited about this new recipe and may can if we like it.
I love carrots like this. I do use frozen (thawed) OJ concentrate instead of plain OJ. I have also done the same thing with pineapple-orange concentrate. Nummy. I agree with Peter H, draining the liquid and making a glaze before serving keeps you from 'wasting' any of the delicious liquid. I think someday I will try a piece of candied ginger in it. an exrta goodie for the cook when you are getting ready to serve???
Thanks for the great canning lesson! I bought a Nesco canner based on your recommendation and it has been a wonderful tool! I have many jars on my shelves now 😊. It is so easy to have an electric canner! I contacted Nesco to see if they sold a spare inner pot, and they do! It is only $20 + s&h, so I bought one to have on hand to use the pressure cooker function. I'll have to save this "lesson" for the future. I have the same blue book, and you're right, the instructions are very vague for those of us that are just learning to can.
This would be good for all kinds of veggies! Mixed oriental veggies would be great- just reduce and thicken juices, add meat, and serve over rice or ramen noodles??? Definitely putting up a lot of these!! Thanks again!!!

Am making these in quart size right now! Added a 1/2tsp of cinnamon and 1tsp of molasses to each jar. Also, I used homemade chicken broth instead of veggie broth for richness. In the canner as I type! I hope the cinnamon doesn’t make it look too weird and granular in the jar.
When I use the Instant Pot Max for canning, I turn off the “keep warm feature” by simply tapping that button to turn it off. I want to try this recipe! 😁
I have been a subscriber for some time now and so enjoy watching you. You make me understand the importance of preserving correctly. You also have convinced me that you no what you say and I feel safe learning from you. I have preserved mostly jams and salsa lol I'm very new. Then freeze alot. I am very interested in using the insta pot as I'm scared to death of the canner. Likely because at a family home I witnessed one blow it's top off when I was a child LoL. Well thank you for the video and recipe. I unfortunately don't have the book but, I have purchased Ball Home preservation

I have made this recipe multiple times and we love it! On a side note, if you push the “Keep Warm” button once it will turn off that function. I have found that the Max releases in a more reasonable time. When the “Keep Warm” is active it stays locked forever!

I have had issues with siphoning with “finger tight” so I started tightening just a little more and my siphoning is much better 🤷♀️
