- I head into the mangrove forrest of North Queensland to forage for my dinner. I give myself 8 hours to gather any foods I can find and cook them up as a 3 course meal at the end of the day.

Hi Nancy, thank you for watching, I guess if you haven’t spent much time in these places they seem a bit shady but I’m quite comfortable where I go and I do know my limits.
@@Andysfishing I’m glad that you feel comfortable doing that. I always love watching your videos because you’re more realistic and authentic than some of the ones I have seen and watched before on RUclips. When you catch those mangos and cod, I get so jealous lol...it’s all good though.
This might be my new favourite type of content. I do a lot of writing and worldbuilding, and usually doing research on the types of food you can forage in a given environment is super academic, all very dry scholarly articles, this is so much easier to understand and digest!

thanks to this channel and Andy ive startet to look for food in my area, ive found so many nut trees and beeries now and even started to Gps place them on my own map.
Great stuff definitely mark them otherwise you’ll forget them trust me, it sounds like you live in a cooler climate I’m jealous of you nuts mushrooms and I think you would have more edible stuff than here
@@Andysfishing yeah we have wild onions mushrooms herbs nuts and so on. But you just have to know what stuff is..mushrooms are something i dont dare to eat from the wild.

If you ever cook snails again, eating them very often myself , they taste way better if you purge them before cooking them.
Just leave them in a tub for 24 hours, with breathing holes and a little cup of water in a corner (I use a soda bottle lid). For added flavour if you put a few sprigs of thyme in there they will eat it and you will be able to taste it when you eat them the next day.
I like the Thyme idea with the flavouring.

In the year old days that would have been the case but crocodiles are now protected so no you can’t killer eat them

Some interesting fare. I would bet on the long bums being very gritty, but I'm glad you didn't go to bed hungry.

I’ve never found the long bums to be Gritti I think because they are usually found in mud not sand, yes I do have more food chain challenges planned

i don't know about longbum and mangrove snails, but my folks long boil land snails atleast twice, to make sure all parasites are killed. limestone were added to the water in the first boiling cycle (i don't know the reason, may be to pop the snails out from the shells?). next is cleaning the guts and washing the meat with fresh water. boil the gutted snail at least once more. the last step is cooking it with your favourite seasoning, heavy curry or light grilled skewer, to each taste.
That sounds like a lot of work. It may be different because there are in saltwater.

What a nice lil French-inspired feast Andy... I'm going to try your prawn amuse-bouche- I have all those ingredients around at all times (frozen shrimp, jealous of your fresh morsels even if they are smaller). The escargot have me ready to hop a plane to come over for dinner lol! BTW, if you were in Burgundy, using parsley would be the only "classic" herb to add, what is this green onion of which you speak!!!??? This is another great video even without the boat (crossing fingers for a speedy fix), and now I'm hungry. May I request frog legs for a future episode? When they're fried they are like a delicate, crispy chicken leg, yum
Thank you Dawn., the garlic butter snails were actually delicious and so were the little prawn crackers perhaps don’t put so much chilli on if you want to taste the prawn. Unfortunately frogs are a protected species in Australia as most natives are, I could eat toads but I’m not sure about that.

Partially thanks to you im building a large native fish/frog pond out the back with a hydroponic fed bog garden for native river greens. . . Admittedly a large reason behind this is I want to be able to wake up, hungover as fuck, and just cast a landline out my bedroom window and catch brekky. . .

If u crack the tip of the shell to release the vacumm you should be able to pull the meat using a toothpick

Not sure if they’re the same species in nsw but similar looking to the long bums. Did them in a dashi stock with soy and black garlic oil. Delicious.

No I don’t think you can buy white bottom shoes but you can make up special boards I might try that one-day

I tell ya, that is some hardcore ingredient sourcing for some French cuisine... Since we are having French cuisine.. Let's refer to your "prawn appetizer" as "prawn canapes", I figure it fits with your escargot..I am not sure what the French would call the "long-bum and pig face, so I guess we can just leave that as an Australian delicacy.. @@Andysfishing Yep, she knows French cuisine.. I went to a culinary university called Johnson and Wales where I was classically trained and French is the basis of most culinary training.. That was 30 years ago and since then I have worked in dozens of kitchens.. I only worked in one French kitchen and that was a "Michigan" inspired French bistro.. I grew up in the Southern U.S. mostly South Carolina, so I would say I specialize in Low-Country cuisine.. Now if you want some shrimp and grits, that I can do...LOL
Pretty sure that small crab at the beginning of the video was a Xanthid crab.
That species of crab that can be very poisonous. They are the puffer fish of the crab variety. Tetrodotoxin and saxitoxin found in their muscles and eggs.
