  • Lard has gotten an unjustified bad rap due to some clever marketing by competitors. It's time we brought back this nutritional powerhouse and start using it in our kitchens again. I show you how to render your lard, how to tell when it is done rendering, and some of the many health benefits of lovely, lovely lard.

    I just made lard for the first time ever and now I’m hooked! I made 5 pints from 2 slabs of fat back. I tossed all of the cracklings but maybe next time I’ll keep them 🎉
    I’ve already fried potatoes and onions to test it out and they cooked up perfectly. No pork taste or added flavor at all. I am so pleased.
    I feel like my Granddad is smiling down on me from Heaven ❤ he used to raise pigs 🐖 and make lard. I remember turning down the lard and telling him it was unhealthy. Now look at me, 30 years later and I’m making my own lard. When you know better you do better 🎉❤😂

    I love your presentation and style of this video! Well done, and I learned something about lard! What- it has 1000IU of Vitamin D per spoonful?! Wow! What a superfood, on top of being delish! We all in the PNW need more Vitamin D....such a shame that this healthy food got such a bad rap from the big food producers over the decades... We know better now, now don't we?!     Gave it a try yesterday. This morning they're white and beautiful but not solid. I think my house is too warm? So, I put one out on the porch to see if it solidifies. Another amazing video of knowledge. Thank you Tessa!!!

    Is it shelf stable? I didn't see you do the canning process or a water bath. I've heard you need to keep it refrigerated at all times, even if it's a new jar. Tips and tricks, please!

      It is! The heat from the hot lard will make them seal, no need to can it. As long as you evaporated all the moisture out of it, it will keep shelf stable in a cool place for 6-12 months. Any moisture in there will cause it to go rancid faster so it’s important to cook it until the bubbles stop. You can also refrigerate or freeze it to extend the shelf life 😁

    I mentioned this before, but my mom used to save the grease left over from frying bacon. She would use it to fry up other foods, like French chefs use duck fat.
    I know anyone who watches these videos is no doubt familiar with James Herriot's "All Creatures Great and Small" books (I almost became a veterinarian because of these books). If you haven't read them yet, you should. Readers Digest has a coffee table collection of his books with all kinds of amazing photos, as well as information and drawings in the margins of almost every page. It's one of my favorite books.
    Anyway...
    In one of his chapters, he revealed his "almost pathological" hatred for fat. He also talked about how medical science at the time he wrote that particular book was coming down on the consumption of fat, how it's bad for us. However, he went on to say that the Yorkshire farmers ate a lot of fat, and it didn't seem to bother them at all. He surmised that the very active lifestyle of farming, with all of its robust work/exercise must burn off the fat that they consumed.
    All I can say about medical science is that the results from all the research doctors do seems pretty wishy-washy to me. One year, something is found to be bad for you, but five or ten years later they've learned that it's actually good for you.
    Just like with lard here: considered horrible for your health for decades, but now they've discovered all kinds of good things about it.

      I agree Jim! Part of the reason we have a collective recoil when it comes to lard is due to clever and successful marketing from Crisco. They touted Crisco as a ‘healthier’ alternative and that lard was unhealthy. There was also a book written by Upton Sinclair called ‘The Jungle’ that said that men often fell into the huge vats of rendering lard and were sold to the public. That turned people off of lard as well.
      And yes, the diet advice given is wishy washy and I’m sure has *nothing* to do with the interests of anyone funding the research.
      And thus, I look at what we, as a species, really historically ate before all these highly processed food-like-substances started entering out diets.

      I'm aware of Sinclair's book. I heard a story about it...
      Those sausage grinding vats were left open all the time, even after workers left for the day. Rats and flies would get into the vats and still be in there the next day. The workers would just keep tossing in bits of meat & fat. Then they'd grind everything up, meat, fat, rats, and flies (with their maggots) to make sausage. That's why sausage has such a bad reputation to this day (hot dogs, too).
      As the story goes, Teddy Roosevelt was eating his favorite food - sausages - in the Oval Office when reading that part of Sinclair's book. He threw the plate of sausages out the window, followed by the book. He later went out to retrieve the book to finish reading it. Because of this, reforms were made.
      LOL!
      I don't know if the story is true or not, but I like to think so.
      BTW if you want to see how hot dogs are made commercially nowadays and how they're eaten all over the country, plus be entertained at the same time, you need to check out a documentary by Rick Sebak called either "A Hot Dog Program" or "A Hot Dog Show." It used to appear on PBS a lot, but I haven't seen it in a while.
      He's also produced shows about ice cream, sandwiches, bakeries, and breakfast foods. They are all more interesting and entertaining than they sound.

    Help! Some of my lard is so runny....... Too much water from me attempting in the instant pot. Suggestions? Place in a pot to boil off the excess moisture? Thank you in advance and love your video!

      Thank you! Keep an eye out or call your local butchers! Sometimes you can get it very inexpensively. Put it out there in local livestock groups.

    I'm definitely a lard fan 😃 Unfortunately, my source has probably been from pigs in concentration camps 😔 I will look into other option. A friend showed me how to make soap from lard this past year and it is really nice soap! I love your videos.

      Haha they were delicious! Nope, they don’t need to be canned at all. The heat from the hot lard will make them seal. If you keep them in a dark, cool place they will store for 6 months to a year. You can also keep them in the fridge or freeze them for even longer storage 😁

      No need to process them, no. The heat from the hot lard causes them to seal. Kept in a cool place it is shelf stable and good for 6-12 months. You can refrigerate or freeze for a longer shelf life

    And it's also aphrodisiac just like oysters where do you think the zinc comes from the ground shellfish and catfish has a lot of zinc the aphrodisiac is the zinc pigs have a lot of zinc because they eat stuff right off the ground and dirt just as well as catfish and shellfish

    All you need to do is just fried up a bunch of bacon and there you are you have your l a r d ,,, I go a few months without eating bacon and and a week ago I had bacon two mornings for breakfast I swear I felt my chest and heart kind of like plugged up feeling and skipping a beat

    So saving bacon fat from bacon bought from the store doesn't have all the nutritions you are talking about?

      You know, I’m not real sure as I have researched it. I imagine if the bacon was from pasture raised pigs it would have the same nutritional value. If it’s your run-of-the-mill bacon from the store, it came from CAFO pigs that never saw the light of day, so that pork wouldn’t have the same nutritional benefits, no.
