👨🍳 Ingredients You’ll Need:
For Marinating Paneer:
250-300 grams of paneer cubes
1 tbsp - hung curd
1/2 tsp - red chilli powder
1/2 tsp - garam masala
1/2 tsp - coriander powder
1/4 tsp - cracked black pepper
Salt - to taste
Pinch of - turmeric powder
1-2 - tsp oil
For Biryani Masala:
2 tbsp - ghee
Few peppercorns
2-3 - bay leaves
1-star anise
1- big cardamom
2-3 - green cardamoms
1- cinnamon stick
2-3 tbsp - onion paste
1-2 - split green chillies
1 1/2 tsp - ginger garlic paste
1 tbsp - mantra garam masala
2 tbsp - mantra chole masala
1 1/2 cups - boiled chole (chickpeas)
Salt - to taste
1 1/2 cups - tomato puree
Millet stock water (adjust as needed)
For Paneer:
1-2 tsp - ghee
1/2 tsp - jeera (cumin seeds)
For Biryani Layering:
1 1/2 tbsp - ghee
Mint leaves (for layering)
Barista (fried onions)
Fresh coriander leaves (for layering)
1 1/2 cups - boiled foxtail millets (or preferred millet)
Additional stock water (if required)
Process:
• Marinate the Paneer: Take 250-300 grams of paneer cubes in a bowl. Add 1 tbsp hung curd, 1/2 tsp red chilli powder, 1/2 tsp garam masala, 1/2 tsp coriander powder, 1/4 tsp cracked black pepper, salt to taste, and a pinch of turmeric powder. Add 1-2 tsp of oil to the mixture and mix well. Coat the paneer cubes thoroughly with the marinade and set it aside.
• Prepare the Biryani Masala: In a vessel, heat 2 tbsp ghee. Add a few peppercorns, 2-3 bay leaves, 1 star anise, 1 big cardamom, 2-3 green cardamoms, and 1 cinnamon stick. Let them crackle. Add 2-3 tbsp onion paste and sauté it well. Add 1-2 split green chillies and 1 1/2 tsp ginger garlic paste. Sauté until aromatic. Add 1 tbsp Mantra garam masala and 2 tbsp Mantra chole masala. Mix well. Add the millet stock water into the masala mixture and stir it. Add 1 1/2 cups boiled chole and mix. Season with salt to taste. Add 1 1/2 cups tomato puree and stir. Let it simmer for 5-6 minutes, adding more stock water as necessary to adjust the consistency.
• Cook the Paneer: Heat 1-2 tsp ghee in a separate pan and add 1/2 tsp jeera (cumin seeds). Let them crackle. Add the marinated paneer cubes to the pan. Stir and flip the cubes to cook both sides. Cover and set aside (turn off the gas).
• Layer the Biryani: Heat 1 1/2 tbsp ghee in a large vessel. Line the bottom with mint leaves, followed by a little barista (fried onions) and fresh coriander leaves. Add the first layer of boiled foxtail millet. Add a layer of the prepared chole masala and a layer of cooked paneer. Top with
more barista, mint leaves, and coriander. Repeat the layers with the remaining millet, chole masala, and paneer, and finish with a final layer of millet and a drizzle of ghee. Top the final layer with more barista, mint leaves, and coriander.
• Cook the Biryani: Cover the vessel with a tight-fitting lid. Cook the biryani on low flame for 15-20 minutes to allow all the flavours to meld together.
• Serve: Fluff the biryani gently, and it’s ready to serve. Enjoy your delicious Paneer Chole Millet Biryani!
